Description
Apple crumble is a traditional family favorite and it’s hard to tell that this version is gluten-free, grain-free, wheat-free, and to top that off as sugar-free as well!
Ingredients
- 1/4 cup desiccated coconut
- 1 cup almonds
- 1/4 cup coconut flour
- 1/2 cup macadamia flour or flour of choice
- 1 cup gluten-free oats or add more coconut flour
- 1/4 cup sweetener of choice
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 1/2 cup butter
Filling
- 8 apples peeled and cut into chunks
- 1/4 cup sweetener of choice to taste
- 1 tsp pumpkin spice (optional)
- 1 tsp ground cinnamon
- 1 tsp ground ginger
- 1/2 tsp ground nutmeg
- 2 large lemons – Juice
Instructions
- Combine the apples, sweetener, and spices.
- Mix till well blended.
- Pour over the lemon juice and stir through.
- Pour mixture into a greased baking dish (grease it with butter for an added great taste).
- For the topping, combine the almonds and oats in a food processor.
- Pulse till the nuts are roughly chopped.
- Combine with the coconut, flour, and spices.
- Rub in the butter until crumbly.
- Sprinkle over the apple mixture.
- Bake at 180C / 350F for 45-50 minutes until the apple is tender and the crumble golden brown.
- Serve warm with whipped cream or ice-cream.
- This makes a very large serving size which I portioned in 2.
- The ideal sweet indulgence without the guilt.
