Description

This cheesy pasta bake brings together smoky bacon, sweet peppadews, a tomato and chili sauce, and plenty of melted cheddar. The eggs help hold everything together, while juicy tomato slices on top add a lovely finishing touch.

Ingredients

Units Scale
  • Cooked macaroni, prepared according to package instructions
  • 7/8 cup – 200 g diced back bacon or smoked sausage
  • 1 tbsp olive oil, for frying
  • 1 onion, chopped
  • 2 tsp minced garlic
  • 3 tbsp chopped peppadews (sweet piquant red peppers)
  • 1 cup All Gold tomato and chili pasta sauce
  • 3 tbsp sour cream
  • 1/4 cup boiling water, plus extra if needed
  • 1 1/2 cups grated cheddar cheese
  • 2 tomatoes, cut into rounds
  • 4 large eggs
  • 1/2 cup milk
  • Salt and black pepper, to taste
  • Cooking spray, for greasing the baking dish

Instructions

  1. Cook the macaroni according to the package instructions until just tender. Drain well and set aside. Preheat your oven to 350⁰F (180⁰C) and lightly coat a medium ovenproof baking dish with cooking spray.
  2. Heat 1 tbsp olive oil in a frying pan over medium heat. Add 200 g diced back bacon or smoked sausage and fry until the bacon is crispy or the sausage is nicely browned. Remove from the pan and set aside. If there’s plenty of fat left in the pan, drain off the excess, leaving a little behind for the vegetables.
  3. Add 1 chopped onion to the same pan and cook until softened. Stir in 2 tsp minced garlic and 3 tbsp chopped peppadews, then cook for another minute or so, stirring to prevent the garlic from burning.
  4. Pour in 1 cup All Gold tomato and chili pasta sauce, 3 tbsp sour cream, and 1/4 cup boiling water. Stir well and let the sauce simmer for 2 minutes. If it looks too thick to coat the macaroni, add a little more hot water. Taste the sauce and season with salt and black pepper as needed.
  5. Transfer the drained macaroni to the prepared baking dish. Pour the onion, garlic, and peppadew sauce over the pasta and mix thoroughly so every bit gets coated.
  6. In a separate bowl, lightly beat 4 large eggs with 1/2 cup milk. Pour the egg mixture evenly over the macaroni and gently toss to distribute it throughout the dish. Stir in the cooked bacon or browned sausage, then spread the pasta out evenly.
  7. Scatter 1 1/2 cups grated cheddar cheese over the top and arrange 2 sliced tomatoes across the surface.
  8. Bake uncovered at 350⁰F (180⁰C) for 20 to 25 minutes, or until the egg mixture is set in the centre and the cheese has melted. If the top needs a little more colour, leave it in for a few extra minutes, keeping an eye on the tomatoes and cheese.
  9. Let the pasta bake stand for 5 minutes before serving. This gives the egg mixture a chance to settle, making it easier to scoop out generous portions without everything falling apart.

Additional Information, Tips and Suggestions

  • What temperature should the oven be? Preheat the oven to 350⁰F (180⁰C). Bake uncovered for 20 to 25 minutes, checking that the egg mixture has set in the centre before serving. If it is still loose, bake for another 3 to 5 minutes and check again.
  • Can I use back bacon or smoked sausage? Both work well. Fry 200 g diced back bacon until crispy, or brown 200 g smoked sausage in a little olive oil. Drain excess fat from the pan before cooking the onion and garlic to avoid a greasy sauce. Diced ham or cooked shredded chicken are also suitable alternatives.
  • Can I replace the peppadews? Yes. Chopped roasted red peppers give a milder flavour, while finely diced sweet red peppers add a little crunch. Peppadews have a distinctive sweet and tangy taste, so a small splash of vinegar can help recreate some of that tang if you use a milder substitute.
  • What can I use instead of All Gold tomato and chili pasta sauce? Use another tomato-based pasta sauce. If you choose a plain tomato sauce, add a pinch of chili flakes or a little chopped sweet chili pepper to bring back the gentle heat. Taste before adding extra salt, as the bacon and sauce may already provide enough seasoning.
  • Can I substitute the sour cream? Plain Greek yogurt or crème fraîche can replace the 3 tbsp sour cream. Stir the substitute into the sauce over low heat to reduce the chance of curdling.
  • Can I use another type of pasta? Absolutely. Penne, fusilli, and small pasta shells work well. Cook the pasta until just tender rather than very soft, since it will continue cooking in the oven.
  • How do I stop the pasta bake from drying out? Make sure the sauce coats the pasta thoroughly before adding the egg mixture. Start with 1/4 cup boiling water and add a little more if the sauce is too thick. Avoid baking longer than necessary, and let the dish stand for 5 minutes before serving.
  • Can I prepare the dish ahead of time? You can cook the pasta, prepare the sauce, and brown the meat earlier in the day. For the best texture, assemble the dish shortly before baking. If you assemble it in advance, cover and refrigerate it promptly, then allow extra baking time if it goes into the oven cold. Check that the centre is fully set.
  • How should I store leftovers? Cool the leftovers promptly, place them in an airtight container, and refrigerate for 3 to 4 days. Reheat individual portions in the microwave or warm a covered baking dish in a 325⁰F (165⁰C) oven until piping hot throughout. Add a splash of milk or water if the pasta seems dry.
  • What should I serve with this pasta bake? A crisp green salad, steamed broccoli, roasted vegetables, or garlic bread would complement the rich cheese and smoky bacon. Choose a fresh vegetable side if you want to balance the creamy sauce and hearty pasta.
