Description

These Mini Pizza Bites are loaded with seasoned chicken, melted cheese, sweetcorn and colourful veggies, all held together in little savoury bites. They’re easy to mix, quick to bake and just right for lunchboxes, party platters, snacks or those days when you fancy something cheesy without making a full pizza.

Ingredients

Units Scale
  • 2 cups chicken fillet, cut into small cubes
  • 1 tbsp butter or ghee, for cooking the chicken
  • 1 tbsp garlic paste
  • 2 tsp chicken spice
  • Ground chili, to taste
  • Salt, to taste
  • 1 1/2 cups grated cheese
  • 1 cup green pepper, diced
  • 1 small tomato, finely chopped and excess liquid drained
  • 2 large eggs, lightly beaten
  • 7 tbsp cake flour
  • 3 tbsp mayonnaise
  • 3 tbsp tomato sauce
  • 1 1/2 cups sweetcorn, drained well
  • Black pepper, to taste
  • Extra ground chili, if you like a little more heat
  • Cooking spray or a little butter, for greasing the pans

Instructions

  1. Heat 1 tbsp butter or ghee in a frying pan over medium heat. Add 2 cups cubed chicken fillet, 1 tbsp garlic paste, 2 tsp chicken spice, ground chili to taste and a little salt. Cook, stirring occasionally, until the chicken is completely cooked through, with no pink in the centre. Let it cool slightly before mixing it with the other ingredients.
  2. Preheat the oven to 350⁰F (180⁰C). Lightly grease shallow muffin, patty or mini tart pans with cooking spray or butter.
  3. Add 1 1/2 cups grated cheese, 1 cup diced green pepper, 1 small finely chopped tomato, 2 lightly beaten eggs, 7 tbsp cake flour, 3 tbsp mayonnaise, 3 tbsp tomato sauce and 1 1/2 cups drained sweetcorn to a large mixing bowl.
  4. Add the cooked chicken mixture and season with black pepper, salt if needed and extra ground chili to taste. Mix everything thoroughly so the chicken, vegetables and cheese are evenly distributed. The mixture should be thick enough to spoon into the pans. If it looks very wet, add another tablespoon of cake flour.
  5. Spoon the mixture into the prepared pans, filling each cavity about 3/4 full. Press the mixture down gently so the bites hold together as they bake.
  6. Bake at 350⁰F (180⁰C) for 10 to 15 minutes, checking early because smaller bites cook faster than larger ones. They’re ready when the centres are set, the tops are lightly golden and the egg mixture is fully cooked. If your pans are deep or the bites are larger, they may need a few extra minutes.
  7. Leave the bites in the pans for 3 to 5 minutes before carefully removing them. Serve warm, or let them cool before packing them into lunchboxes or serving them on a snack platter.

Additional Information, Tips and Suggestions

  • Cook the chicken first: The chicken must be fully cooked before it’s added to the mixture because the bites have a relatively short baking time.
  • Keep the mixture thick: Drain the sweetcorn and excess liquid from the tomato. If the mixture seems too wet, add 1 tbsp cake flour at a time until it holds together.
  • Choose the right pan: Shallow patty pans or mini muffin pans make smaller bites, while standard muffin pans produce larger portions that need extra baking time.
  • Prevent sticking: Grease the pans thoroughly, including the corners and sides, to help the bites release easily.
  • Allow them to rest: Leave the baked bites in their pans for 3 to 5 minutes before removing them so they can firm up.
  • Adjust the seasoning: Chicken spice, cheese and tomato sauce all contribute saltiness, so taste the cooked chicken mixture before adding the eggs and adjust the seasoning carefully.
  • Can I prepare these ahead of time? Yes. Cook the chicken, chop the vegetables and grate the cheese in advance. Keep the prepared ingredients refrigerated separately and mix shortly before baking for the best texture.
  • Why are my bites soggy? Excess liquid from the tomato or sweetcorn is a common cause. Drain both well, check that the mixture is thick enough and bake until the centres are set.
  • Can I serve them cold? Yes. Once cooled and stored safely in the refrigerator, they’re suitable for lunchboxes and cold snack platters. Keep them chilled until serving.
  • How do I know when they’re cooked? The tops should be lightly golden, and the centres should be set rather than wet or runny. Larger bites may need a few extra minutes in the oven.
  • Can I make them gluten-free? You can try a gluten-free all-purpose flour blend in place of cake flour. Check that the chicken spice, sauces and other packaged ingredients are also labelled gluten-free. The texture may vary slightly depending on the flour blend. What can I serve with them? Serve the bites with a green salad, sliced vegetables, a creamy garlic dip, sweet chili sauce or extra tomato sauce. For a light lunch, pair them with soup or a fresh salad.
Ingredient substitutions
  • Chicken: Use 2 cups cooked, diced chicken instead of raw chicken fillet. Season it with the garlic paste and chicken spice before mixing.
  • Cheese: Cheddar, mozzarella or a combination of both works well.
  • Green pepper: Substitute red or yellow pepper, or use a small amount of finely chopped onion.
  • Sweetcorn: If you don’t have sweetcorn, try finely diced cooked vegetables, making sure they’re not watery.
  • Cake flour: All-purpose flour can be used in the same quantity. Self-raising flour is another option, although the texture may be slightly different.
  • Mayonnaise: Plain Greek yogurt can be used, but it may change the flavour and moisture level slightly.
  • Tomato sauce: Use a thick tomato-based sauce rather than a watery one to help maintain the mixture’s consistency.
  • Chili: Leave it out for a mild version, or adjust the amount to suit your preference.
Storage and freezing
  • Refrigerating: Allow the bites to cool, then place them in an airtight container and refrigerate within 2 hours. Use within 3 to 4 days.
  • Freezing: Cool completely before freezing in a single layer. Once firm, transfer to a freezer-safe container, separating layers with parchment paper. Freeze for up to 2 months for best quality.
  • Reheating: Thaw frozen bites in the refrigerator overnight. Reheat in the oven or microwave until piping hot throughout. Avoid repeated reheating, and only warm the portion you plan to eat.
