Description
These Cheesy Chicken Pepper Mushroom Quesadillas are packed with tender chicken, sautéed mushrooms, colourful peppers and plenty of melted cheddar. They’re quick enough for a weekday meal but tasty enough that you’ll want to make them again.
Ingredients
- 1 punnet mushrooms, halved and thinly sliced
- 2 peppers, any colour, diced
- 2 chicken breasts, cut into small cubes
- 1 tsp dried oregano
- 1/2 tsp cayenne pepper
- 1 medium onion, thinly sliced
- 2 tbsp olive oil
- Salt and freshly ground black pepper, to taste
- 8 multigrain or wholewheat soft tortilla rounds
- 2 cups grated cheddar cheese, approximately
Instructions
- Heat 2 tbsp olive oil in a large non-stick frying pan over medium heat. Add 1 medium thinly sliced onion and cook for 3 to 4 minutes until softened. Stir in 1 tsp dried oregano.
- Add 2 chicken breasts, cut into small cubes, and cook for about 5 to 7 minutes, stirring occasionally, until the chicken is cooked through and lightly browned.
- Add 2 diced peppers, 1 punnet halved and thinly sliced mushrooms and 1/2 tsp cayenne pepper. Cook for 7 to 10 minutes, stirring now and then, until the mushrooms have released their liquid and that liquid has cooked away. Keep cooking until the vegetables and chicken are lightly browned rather than watery.
- Season the chicken and vegetable mixture with salt and freshly ground black pepper to taste. Remove from the heat and let it cool for a few minutes so the tortillas don’t become soggy.
- Place 1 multigrain or wholewheat tortilla round in a clean nonstick frying pan over medium-low heat. Sprinkle with about 1/4 cup grated cheddar cheese, leaving a small border around the edge.
- Spread about 1/2 cup of the chicken, pepper and mushroom filling evenly over the cheese. Sprinkle with another 1/4 cup grated cheddar cheese, then cover with a second tortilla.
- Cook the quesadilla for 2 to 3 minutes, or until the underside is lightly toasted and the cheese is starting to melt. Carefully flip it and cook the other side for another 2 to 3 minutes until toasted and the cheese is fully melted.
- Repeat with the remaining tortillas, filling and grated cheddar cheese. Let each quesadilla rest for a minute before cutting into wedges.
- For a rolled version, place the chicken filling and grated cheddar cheese down the centre of each tortilla, fold in the sides and roll firmly. Toast seam side down in the non stick frying pan, turning gently until golden brown and heated through.
- Serve hot with sour cream and guacamole if you like.

Additional Information and Tips
- How do you prevent soggy quesadillas? The mushrooms release quite a bit of moisture, so the chicken and vegetable mixture needs to cook until all visible liquid has evaporated. Letting the filling cool for a few minutes before assembling also helps keep the tortillas crisp.
- Why is the filling cooked before assembling? The chicken needs to be fully cooked before it goes into the tortilla. Cooking the filling separately also allows the mushrooms and peppers to develop more flavour instead of steaming inside the quesadilla.
- How much cheese should be used? Approximately 2 cups grated cheddar cheese gives enough cheese for the four large quesadillas, using about 1/4 cup on each side of the filling. You can adjust this depending on how cheesy you like them.
- Can the cayenne be adjusted? Yes. The 1/2 tsp cayenne pepper gives the filling a noticeable but manageable kick. Reduce it or leave it out for a milder quesadilla, or replace it with a little smoked paprika.
- Can other tortillas be used? Yes. Multigrain and wholewheat tortillas work well, but regular flour tortillas are also suitable. Choose tortillas that are large enough to hold the filling without tearing when folded.
- Can the vegetables be changed? Absolutely. Corn, spinach, zucchini or spring onions can be used in place of some of the peppers or mushrooms. Vegetables with a high water content should be cooked until excess moisture has evaporated.
- Can cooked chicken be used? Yes. Leftover cooked chicken or rotisserie chicken can be chopped or shredded and added to the cooked vegetables. Since the chicken is already cooked, heat it through rather than cooking it for several minutes.
- What cheese can replace cheddar? Mozzarella, Monterey Jack, Gouda, Colby or a cheese blend that melts well can replace the cheddar.
- Can the filling be prepared ahead? Yes. The chicken and vegetable filling can be prepared up to 2 days ahead and kept covered in the refrigerator. Assemble and toast the quesadillas when you’re ready to serve them.
- How long can leftovers be stored? Cooked quesadillas can be refrigerated in an airtight container for up to 3 days. Reheat them in a dry frying pan, oven or air fryer to bring back some of their crisp texture.
- Can the quesadillas be frozen? Yes. Allow cooked quesadillas to cool completely, then wrap them individually and place them in a freezer bag or airtight container. They can be frozen for up to 2 months for the best quality and reheated from frozen in a frying pan, oven or air fryer.
- What is the best way to flip them? Use a wide, flat spatula and keep the pan at medium-low heat. Don’t overfill the tortilla, as a lighter filling makes the quesadilla much easier to turn without spilling.
- Should the quesadillas rest before cutting? Yes. Let them sit for about 1 minute after cooking. The melted cheese settles slightly and helps hold the filling together when the quesadilla is cut.
- What can be served with them? Sour cream and guacamole are natural choices. Salsa, chopped avocado, a simple green salad or your favourite dipping sauce would also work well.

Cheesy Chicken Pepper Mushroom Quesadillas deliver tender chicken, savoury mushrooms, colourful peppers and melted cheddar inside crisp toasted tortillas. They make a satisfying dinner with very little fuss, and the combination of creamy cheese and seasoned vegetables gives every bite plenty of flavour. Serve them hot with guacamole or sour cream for a meal that’s ready to enjoy almost as soon as it leaves the pan.
