Ingredients
- 2 shredded Chicken Breasts. (I Sous vide mine)
- 1 Butternut Squash roasted and mashed.
- 1 Chipotle Chile in Adobe, plus 1 tsp of Adobe Sauce.
- 4 Tostadas
- 1 small onion, chopped
- 1 medium tomato, chopped
- 1 small jalapeño, seeded and chopped
- Shredded lettuce of choice
- Sour cream
- Fresh cilantro sprigs
- Cotija cheese or feta cheese
- Lime wedges
Instructions
- Roast Butternut cut side down on a baking sheet sprayed with oil.
- Bake in a 350F/180C oven for 35 minutes, or until done.
- When cool enough to handle, scoop out pulp and mash.
- Add chopped Chipotle and Adobe Sauce.
Assembly:
- Warm Tostada shells
- Place on plate
- Add 2-3 tbsp. of Butternut Squash with Chipotle to the Tostada and spread carefully to the edges.
- Add a small amount of shredded chicken.
- Top with chopped onion, tomato, and shredded lettuce
- Add a dollop of sour cream
- Top with sprigs of cilantro
- Serve with Lime Wedges and Cotija cheese.
