Description

Crisp choux pastry, fluffy fresh cream and a smooth chocolate topping make these homemade eclairs a real treat. They look impressive, but with a few handy tips, you can make them right in your own kitchen.

Ingredients

Units Scale

Choux pastry

  • 3.5 tbsp (50 g) butter
  • 1 cup water
  • Pinch of salt
  • 0.8 cups (200 ml) all-purpose flour, sifted
  • 4 large eggs, at room temperature

Filling

  • 1 cup (250 ml) whipping cream, cold
  • 1 to 2 tbsp icing sugar, optional
  • 1 tsp vanilla extract
  • For the chocolate topping
  • 3.5 oz (100 g) semi-sweet chocolate, chopped

Instructions

  1. Combine 1 cup water, 50 g butter and a pinch of salt in a medium saucepan. Heat over medium heat until the butter has melted and the mixture comes to a full boil.
  2. Remove the saucepan briefly from the heat and add 200 ml sifted all purpose flour all at once. Stir vigorously with a wooden spoon until the mixture forms a smooth dough and pulls away from the sides of the saucepan.
  3. Return the saucepan to low heat and stir the dough for about 1 to 2 minutes to dry it slightly. Transfer it to a mixing bowl and let it cool for 5 to 10 minutes, until warm but not hot.
  4. Beat in the 4 large eggs, one at a time, mixing thoroughly after each addition. The dough should become smooth, glossy and thick enough to hold its shape. You may not need every bit of the fourth egg, so check the consistency as you go.
  5. Preheat the oven to 220⁰C (425⁰F). Transfer the dough to a piping bag fitted with a large round or star nozzle. Pipe 10 to 12 even strips, about 10 to 12 cm long, onto a lightly greased or parchment lined baking tray, leaving space between each one.
  6. Bake for 15 minutes at 220⁰C (425⁰F), without opening the oven door. Reduce the temperature to 190⁰C (375⁰F) and bake for another 10 to 15 minutes, until the eclairs are well risen, firm and a deep golden brown.
  7. Remove the eclairs from the oven and immediately make a small slit in the side or bottom of each one to let the steam escape. Return them to the turned off oven for 5 minutes with the door slightly ajar, if they’re still moist inside. Transfer to a wire rack and cool completely.
  8. For the filling, beat 1 cup cold whipping cream with 1 to 2 tbsp icing sugar, if using, and 1 tsp vanilla extract until firm peaks form. Be careful not to overbeat, or the cream may turn grainy.
  9. Once the eclairs are completely cool, use a piping bag fitted with a small nozzle to fill each one through the slit or make two small holes underneath each eclair and pipe in the cream until filled.
  10. For the chocolate topping, place 100 g chopped semi sweet chocolate in a heatproof bowl. Heat 1/3 cup whipping cream in a small saucepan until steaming but not boiling, then pour it over the chocolate. Leave for 2 minutes before stirring until smooth and glossy.
  11. Allow the chocolate mixture to cool slightly until it thickens enough to coat the eclairs without running off. Dip the top of each filled eclair into the chocolate or spoon the topping over it.

Additional Information and Tips

  • How do I know when the choux pastry is ready? The dough should be smooth, glossy and thick enough to hold its shape when piped. Add the eggs gradually, as you may not need all of the fourth egg, depending on the dough’s consistency.
  • Why does the dough need to cool before adding the eggs? If it’s too hot, the eggs may begin to cook. Let the dough cool for 5 to 10 minutes until warm but not hot before beating in the eggs one at a time.
  • Why did my eclairs spread instead of rising? The dough may have been too wet or the eggs may have been added too quickly. The finished dough should be thick enough to hold its piped shape.
  • Why did my eclairs collapse after baking? They may not have baked long enough to dry out inside. Bake until the shells are firm and well browned, and avoid opening the oven during the initial baking stage.
  • How do I prevent soggy eclairs? Make a small slit in each shell as soon as it comes out of the oven to release steam. If the insides are still moist, return the shells to the turned off oven for about 5 minutes with the door slightly open.
  • Can I prepare the pastry shells ahead of time? Yes. Bake the shells a day ahead, cool completely and store in an airtight container at room temperature. Refresh them in a 150⁰C (300⁰F) oven for 5 to 8 minutes if they’ve softened, then cool completely before filling.
  • How should I fill the eclairs? Use a piping bag fitted with a small nozzle to pipe the whipped cream through a slit or small holes in the bottom of each cooled shell. Fill until the eclair feels slightly heavier, but don’t overfill it.
  • Can I use a different filling? Yes. Vanilla pastry cream, chocolate pastry cream or a mixture of whipped cream and pastry cream are good alternatives. Keep the filling chilled until you’re ready to pipe it into the shells.
  • What can I use instead of semi-sweet chocolate? Dark chocolate works well for a less sweet topping, while milk chocolate gives a sweeter finish. Adjust the amount of whipping cream slightly if needed to achieve a thick but dippable consistency.
  • Can I use salted butter? Yes. Use 50 g salted butter and omit the additional pinch of salt.
  • Can I use self-raising flour? All-purpose flour is recommended for choux pastry. Self-raising flour isn’t suitable because its raising agents can interfere with the structure of the pastry.
  • How should I store filled eclairs? Keep them in an airtight container in the refrigerator for up to 2 days. They’re best enjoyed on the day they’re filled, as the pastry gradually softens from the cream.
  • Can the unfilled pastry shells be frozen? Yes. Once completely cooled, freeze the shells in an airtight, freezer-safe container for up to 2 months. Thaw at room temperature and refresh briefly in a 150⁰C (300⁰F) oven to restore their crispness. Cool completely before filling.
  • Can the filled eclairs be frozen? Freezing isn’t recommended for cream-filled eclairs, as the whipped cream may change texture and the pastry can become soggy when thawed.
  • Can I make the chocolate topping ahead? Yes. Prepare it in advance and refrigerate in a covered container for up to 3 days. Gently reheat until it reaches a smooth, dipping consistency, then cool slightly before coating the eclairs.
  • When should I add the chocolate topping? Fill the completely cooled shells first, then dip or spoon on the chocolate topping. Refrigerate briefly to help it set before serving.
  • Can I make the eclairs without a piping bag? Yes. Use a sturdy zip-top bag with a small corner snipped off to pipe the dough. For filling, a small spoon can help, although a piping bag gives a neater finish.
