An individual serving and best and moistest Chocolate Mug Cake ever
My boys loved these quick and easy-to-prepare mug cakes. Makes 2 and they are the perfect size
Ingredients
- 1/4 cup all-purpose flour
- 1 Tblspn cocoa powder
- 1/4 tsp baking powder
- 1 Tblsp sugar
- 1/4 cup milk
- 1 egg
- 2 Tblsp olive oil
- 1 tsp Nutella
- Sprinkles

Method:
- Whisk all the ingredients together except the Nutella and sprinkles.
- Divide into 2 microwaveable ramekins and microwave on high for 2 mins.
- Remove and turn out onto plates.
- Using the back of the teaspoon, lightly cover the top of each cake with Nutella spread and the sprinkles.
- Serve

WOW so glad you popped over – Please let me know how the GF turned out, as I also only do GF, so it will be very interesting to know how you modified this recipe.
I won’t so much “modify” it as replace the GF flour with Pamela’s All Purpose. I have had good luck with that mix, and I don’t bake enough to make it worth it to me financially to buy ingredients in bulk to create my own (a la Gluten Free on a Shoestring).
I’ll also make a bit of confectioners sugar butter cream icing to replace the Nutella, which I also don’t keep in the house. I’ll probably make half of it vanilla, then add the chocolate, to see which I prefer (but I’m betting on the vanilla, lol).
But it may be a while before my sweet tooth kicks in and forces me to do either. I’m doing my best to cut out sugar.

I will have to try and track down the GF flour you mentioned. Not familiar with it. Hope I will be able to find it here in Vancouver, Canada. I am not a Nutella fan either, never had it before, but it just seems way too sweet for me, so will substitute as well. Anyway hope you will enjoy it whenever you get time to make it.
Pamela’s is available from Amazon, I believe, and I’m quite sure she has a website with sales details. I like it best of the GF flours I’ve tried – for both taste & ease of substitution.
Her biscuit & pancake mix (Bisquick-like substitute) works beautifully in my old cornbread recipe and I’ve made decent [filled] dinner crepes by diluting her “Pam-cake” recipe a bit and adding an egg (no sugar).
If you don’t already know Nicole Hunn and her “on a shoestring” blog, google it. She is very generous with her recipes online, has a huge Pinterest presence, and shares her sources and reasoning for each in her cookbooks.
