Ingredients

Units Scale
  • 1/3 to 1/2 cup white sugar (sweet tooth? Go with 1/2 cup!)
  • 3 heaping tablespoons Cocoa Powder (and I mean really heaped)
  • 1/4 cup Cornstarch
  • A pinch of Salt
  • 2 3/4 cups Milk
  • 2 tablespoons Butter
  • A generous splash of Vanilla (real vanilla is a game-changer here)

Instructions

  1. Toss the sugar, cocoa powder, cornstarch, and salt into a saucepan.
  2. Whisk it all together until any clumps vanish.
  3. Pour in the milk while whisking to keep everything smooth and happy.
  4. Set the pan over medium heat and stir patiently; this is where the magic happens. As it warms up, the mixture will thicken.
  5. Once it starts bubbling, keep stirring for another minute or so.
  6. It should be thick enough to coat the back of a spoon.
  7. Remove it from the heat and stir in the butter and vanilla until silky.
  8. If you can wait, let it cool. To avoid that weird skin forming on top, press a piece of plastic wrap directly onto the surface.
  9. Or, if patience isn’t your strong suit, dunk the bowl in some ice water and stir it to cool it down faster.
  10. Serve it warm or cold, both ways are equally dreamy.
