Chocolate pudding, rich, creamy, and just the right touch of sweetness for a moreish treat
Ingredients:
1/3 to 1/2 cup white sugar (depends on how sweet you like your chocolate)
3 very heaped tablespoons cocoa powder – like really heaped
1/4 cup cornstarch
Pinch of salt
2 3/4 cup milk
2 tablespoons butter
Splash of vanilla – big splash, and use the real stuff!
Method:
Combine all the ingredients and whisk to break up any lumps.
Add milk and whisk again to combine.
Ensure it is all dissolved.
Then place over medium heat and patiently stir until it starts to thicken.
Keep stirring until it boils.
At this point, it should be thick enough to coat a spoon quite well.
Now remove from the heat and add butter and vanilla.
Stir to combine and then allow to cool. You can cover it with plastic to keep a film from forming over the top.
Or, if you just can’t wait, stir the mixture with the bowl submerged in ice water to cool it down faster.
It’s delicious warm or cold!
