  • How long can it be stored and how? Once cooled, store the Soup in an airtight container in the refrigerator for 3 to 4 days. Reheat it gently on the stovetop or in the microwave until steaming hot throughout. If the soup thickens in the fridge, just add a splash of water while reheating.
  • How finely should I chop the vegetables? Keep the carrot fairly small because it takes longer to soften. The cabbage, pepper, tomato and celery can be roughly chopped since they cook more quickly.
  • Does the celery have to be used? No. It’s optional and the soup will still work without it.
  • How spicy is it? That depends entirely on the chili. A small mild chili gives gentle heat, while a hot chili can change the whole pot. Start conservatively if you’re unsure.
  • Can I blend the soup? Yes. It can be blended completely smooth or only partially blended for a thicker texture.
  • Why sauté the onion and garlic instead of boiling everything? It’s a small extra step, but it builds more flavour. The olive oil also helps the herbs and aromatics taste fuller.

Ingredient substitutions

  • Cabbage: Green cabbage works best, but Savoy cabbage can also be used.
  • Onion: Yellow, white or red onion will work.
  • Tomato: Use 1 cup chopped canned tomatoes if you don’t have a fresh tomato.
  • Pepper: Any sweet pepper works. Red, yellow or orange will give the soup a slightly sweeter flavour.
  • Celery: Leave it out if you don’t have any. It’s completely optional.
  • Carrot: Add another small carrot if you want the soup a little sweeter and more substantial.
  • Chili: Use chili flakes instead, or leave the chili out for a milder soup.
  • Olive oil: Any neutral cooking oil can be used.
  • Oregano and thyme: Italian seasoning can stand in for both, although the flavour will be slightly different.
  • Water: Vegetable broth can replace some or all of the water if you want a more savoury soup. If using salted broth, reduce the added salt and adjust after cooking

Description

A simple vegetable soup that’s light, savoury and surprisingly satisfying, especially when you want something warm without a lot of fuss. 


Ingredients

  • 1 small onion, chopped
  • 1/4 head cabbage, chopped
  • 1 large tomato, chopped
  • 1/2 pepper, chopped
  • 1 stalk celery, chopped, optional
  • 1 small carrot, chopped
  • 1 small chili, finely chopped
  • 2 small cloves garlic, minced
  • 1 tsp olive oil
  • 1/2 tsp salt
  • 1/2 tsp dried oregano
  • 1/2 tsp thyme
  • 4 cups1 litre water

Instructions

  1. Heat 1 tsp olive oil in a large pot over medium heat.
  2. Add 1 small chopped onion and cook for about 3 to 4 minutes, until it starts to soften.
  3. Add 2 small minced cloves of garlic and 1 small finely chopped chili, then cook for another 30 seconds. Don’t let the garlic brown.
  4. Stir in 1/4 head chopped cabbage, 1 large chopped tomato, 1/2 chopped pepper, 1 stalk chopped celery, if using, and 1 small chopped carrot. 
  5. Add 1/2 tsp salt, 1/2 tsp dried oregano and 1/2 tsp thyme. Stir well so the herbs coat the vegetables.
  6. Pour in 1 litre water. Bring the soup to a boil, then reduce the heat to a gentle simmer.
  7. Cover the pot loosely and simmer for 25 to 30 minutes, stirring once or twice.
  8. The cabbage and carrot should be properly tender, not still crunchy. If you prefer softer vegetables, give it another 5 minutes.
  9. Taste the soup before serving. Add a little more salt if needed.
  10. If the soup has reduced more than you like, add a splash of water and warm it through.
  11. Leave the soup chunky for a more substantial vegetable soup, or carefully blend it until smooth.
  12. If blending hot soup, work in batches and don’t overfill the blender.
