Description

This Coconut Chicken Tagliatelle with Coriander brings together tender chicken, colourful peppers and a silky coconut sauce for a pasta dish with a lovely change of pace. It’s easy to make in your home kitchen, and the fresh coriander adds a bright finish that brings everything together.

Ingredients

Scale
  • 3 circles of tagliatelle pasta
  • Water for boiling
  • Salt, to taste, plus extra for the pasta water
  • 1 tsp oil, for the pasta water
  • 1/2 chicken breast, cut into bite sized pieces
  • 1 tsp butter
  • Crushed black pepper, to taste
  • 3/4 packet coconut powder, mixed with 1/4 cup hot milk
  • 3 tbsp diced green and yellow peppers
  • 4 tbsp chopped fresh coriander
  • Extra milk, as needed, to loosen the sauce
  • Coconut milk alternative: Replace the coconut powder and 1/4 cup milk with a small can of coconut milk. Start by adding enough to coat the pasta, then add more if needed.

Instructions

  1. Bring a pot of water to a boil, then add salt and 1 tsp oil. Add the 3 circles of tagliatelle pasta and cook according to the package directions until tender but still holding its shape. Drain well and set aside. You don’t need to let the pasta cool completely if you’re continuing with the recipe straight away.
  2. Cut 1/2 chicken breast into bite sized pieces. Melt 1 tsp butter in a frying pan over medium heat, then add the chicken, salt to taste and crushed black pepper. Sauté until the chicken is cooked through, with no pink remaining in the centre. Remove from the heat and let it rest briefly.
  3. Mix 3/4 packet of coconut powder with 1/4 cup hot milk in a bowl. Stir well until the powder has dissolved and the mixture is as smooth as possible. If you’re using canned coconut milk instead, give it a good stir before measuring out what you need.
  4. Add the cooked tagliatelle pasta, cooked chicken and 3 tbsp diced green and yellow peppers to a pot or deep frying pan. Pour in the prepared coconut mixture and stir gently to coat everything evenly.
  5. Cook over low to medium low heat for a few minutes, stirring gently as the sauce thickens. Don’t let it boil vigorously, as the sauce can become too thick before the pasta has warmed through. If it looks dry, add a small splash of milk and stir until the sauce reaches a creamy consistency.
  6. Taste the sauce and add more salt or crushed black pepper if needed. Once the chicken is hot throughout and the sauce clings nicely to the tagliatelle, remove the pan from the heat.

Additional Information, Tips and Suggestions for Substitutions

  • Can the pasta be frozen? Freezing isn’t recommended for the best texture. The tagliatelle may soften, and the coconut sauce can separate after thawing. For the tastiest result, prepare only what you expect to eat within a few days.
  • How long can leftovers be stored? Transfer leftovers to an airtight container and refrigerate within 2 hours of cooking. Store at 40⁰F (4⁰C) or colder and eat within 3 to 4 days. Reheat only the portion you need, adding a splash of milk if the sauce has thickened.
  • Can coconut powder be replaced with canned coconut milk? Yes. Replace the coconut powder mixed with 1/4 cup hot milk with canned coconut milk. Stir the can well and add the coconut milk gradually until the sauce reaches the desired consistency. The amount needed will depend on the can size and how concentrated the original powder is.
  • Will the coconut flavour be strong? It depends on the brand and quantity of coconut powder or milk used. Start with a smaller amount of the prepared coconut mixture, taste the sauce and add more as needed. Black pepper and fresh coriander help balance the flavour.
  • What can I use instead of chicken breast? Boneless chicken thighs work well and remain tender when cooked properly. You can also use leftover cooked chicken or turkey, adding it towards the end so it warms through without drying out. If using cooked leftovers, ensure they are reheated thoroughly.
  • Can I substitute the tagliatelle? Yes. Fettuccine, linguine and spaghetti are all suitable alternatives. Use the cooking time on the package and drain the pasta well before adding it to the sauce.
  • What vegetables can I add? Mushrooms, spinach, zucchini and red peppers are all good options. Cook mushrooms and zucchini before adding the sauce so their excess moisture doesn’t make it watery. Stir spinach in near the end so it wilts without becoming overcooked.
  • What if I don’t like fresh coriander? Flat leaf parsley is a good alternative if you prefer a milder herbal flavour. Add it just before serving to keep its freshness.
  • Can I make this dish dairy-free? Yes. Replace the butter with olive oil and use a suitable unsweetened plant-based milk. Check the coconut powder label, as some products contain milk ingredients. Canned coconut milk is another convenient option.
  • How do I prevent the sauce from becoming too thick? Add the coconut mixture gradually and cook over low to medium-low heat, stirring gently. If the sauce becomes too thick, add milk a tablespoon at a time until it coats the pasta smoothly. Avoid a vigorous boil, which can make the sauce reduce too quickly.
  • How do I know the chicken is fully cooked? Cut the chicken into evenly sized pieces so it cooks at a similar rate. Check the thickest piece with a food thermometer and make sure it reaches 165⁰F (74⁰C) before serving.
  • Can I prepare ingredients ahead of time? Yes. Chop the peppers and coriander and cut the raw chicken into bite-sized pieces ahead of time. Store the chicken separately in the refrigerator and cook it thoroughly when ready to prepare the dish. For the best texture, cook the pasta and combine the sauce close to serving time.
  • How can I make the recipe for more people? Increase the pasta, chicken, peppers and coriander proportionally. Add the coconut mixture gradually rather than pouring it all in at once, since larger batches may need different amounts of liquid. Taste and adjust the salt and black pepper before serving.
  • How much pasta should I use for one serving? Three circles of tagliatelle can vary in size. For a more consistent serving, use approximately 75 to 100 g of dry pasta per person, adjusting according to appetite and the amount of chicken and vegetables.
  • Is the oil necessary when boiling the pasta? No. The 1 tsp of oil is optional. Stirring the pasta during the first minute of cooking and using plenty of boiling water helps prevent it from sticking together. Salt is useful for seasoning the pasta itself.
