Ingredients

Units Scale

Creamy Coconut Masala Chicken

  • 2 chicken fillets, cut into bite sized cubes
  • Salt to taste
  • 1 baby onion, finely chopped
  • 1/4 tsp turmeric
  • 1 tsp tandoori masala
  • 1/2 tsp peri peri masala
  • 1 tsp chicken masala
  • 1 tsp Durban masala
  • 1/4 tsp white pepper
  • 1 tbsp tomato sauce
  • 1 tsp sweet chili sauce
  • 1 tsp chili garlic sauce
  • 1 tbsp tamarind sauce
  • 1 tsp Mrs. Balls chutney
  • 1 tsp butter
  • 1 small can coconut cream
  • 2 tbsp freshly chopped coriander
  • 1 fresh chili, finely chopped, optional
  • If using coconut powder: 1/2 packet coconut powder, prepared according to the package directions.

Savoury Pulau Rice

Instructions

  1. Combine 2 cubed chicken fillets, salt to taste, 1/4 tsp turmeric, 1 tsp tandoori masala, 1/2 tsp peri peri masala, 1 tsp chicken masala, 1 tsp Durban masala, 1/4 tsp white pepper, 1 tbsp tomato sauce, 1 tsp sweet chili sauce, 1 tsp chili garlic sauce, 1 tbsp tamarind sauce and 1 tsp Mrs. Balls chutney in a bowl. Mix well until all the chicken is coated, cover and refrigerate for at least 20 minutes. An hour is even better if you have the time.
  2. Heat 1 tsp butter in a medium pot over medium heat. Add 1 finely chopped baby onion and cook for 2 to 3 minutes until softened.
  3. Add the marinated chicken and cook for 8 to 10 minutes, stirring occasionally, until the chicken is cooked through. There’s no need to add water at this stage because the chicken and sauces will release some moisture. If the pot starts looking very dry before the chicken is cooked, add 1 to 2 tbsp water.
  4. Lower the heat and add 1 small can coconut cream. Stir well and let the chicken simmer gently for 2 to 3 minutes. Don’t let it boil aggressively, as the coconut cream can separate.
  5. Stir in 2 tbsp freshly chopped coriander and 1 finely chopped fresh chili, if using. Give the chicken one last gentle simmer for about 1 minute, then take it off the heat.
  6. If you’re using 1/2 packet coconut powder instead of coconut cream, prepare it according to the package directions and stir it into the cooked chicken. Add a small splash of hot water if the sauce needs loosening.
  7. For the rice, heat 1 tbsp butter and 1 tsp oil in a separate pot over medium heat. Add 1 finely sliced onion and cook for about 5 to 6 minutes until softened and lightly golden.
  8. Add 5 curry leaves and 1 tsp cumin seeds and cook for about 30 seconds until fragrant.
  9. Add 1 1/2 cups rinsed basmati rice and salt to taste. Stir gently and sauté for about 2 minutes, making sure the rice is coated with the butter, oil and spices.
  10. Add 2 1/4 cups hot water and bring to a gentle boil. Reduce the heat to low, cover with a tight fitting lid and cook for about 12 to 15 minutes, or until the water has been absorbed and the rice is tender.
  11. Scatter 1 cup frozen peas over the cooked rice. Replace the lid, switch off the heat and leave the pot covered for 5 minutes. The residual heat will warm the peas without turning them mushy.
  12. Fluff the pulau rice gently with a fork and serve with the creamy coconut masala chicken.

Additional Information and Tips

  • How long should the chicken marinate? Marinate for at least 20 minutes in the refrigerator. If you have more time, up to 1 hour will give the masalas and sauces longer to flavour the chicken.
  • Can I use chicken thighs? Yes. Boneless, skinless chicken thighs work very well and tend to stay juicy. Cut them into similar-sized pieces and cook until completely done.
  • Can I reduce the heat? Yes. Leave out the fresh chili and reduce or omit the 1/2 tsp peri peri masala. The tandoori, Durban and chicken masalas will still provide plenty of flavour.
  • Can I make it hotter? Yes. Add extra fresh chili or increase the peri peri masala gradually. Taste the sauce before adding more because the chili garlic sauce already contributes some heat.
  • Can I use coconut milk instead of coconut cream? Yes. Coconut milk creates a lighter, thinner sauce. Coconut cream gives the chicken a richer and creamier finish.
  • Can I use coconut powder instead? Yes. Use 1/2 packet coconut powder prepared according to the package directions, then stir it into the cooked chicken. Add a small splash of hot water if the sauce needs loosening.
  • What can I substitute for Durban masala? Use your preferred curry masala or add another 1 tsp chicken masala. The flavour will change slightly, but the recipe will still work.
  • What can I substitute for tamarind sauce? Use a little extra Mrs. Balls chutney with a small squeeze of lemon juice. Add the lemon gradually so the sauce doesn’t become too sharp.
  • What if I don’t have Mrs. Balls chutney? Use another fruit chutney or a small amount of mango chutney. Adjust gradually because chutneys vary in sweetness.
  • Why shouldn’t the coconut cream boil hard? A gentle simmer helps keep the sauce smooth. A vigorous boil can cause the coconut cream to separate.
  • Why is the rice rinsed? Rinsing removes excess surface starch, which helps the basmati grains cook more separately instead of becoming sticky.
  • Why use hot water for the rice? Hot water brings the rice back to a simmer quickly and helps keep the cooking time more consistent.
  • Why is the rice water measured instead of simply covering the rice? Measuring the water gives a more reliable result. About 2 1/4 cups hot water works well for 1 1/2 cups basmati rice, although different brands can vary slightly.
  • Can I add other vegetables to the rice? Yes. Diced carrots, green beans or finely chopped bell peppers work well. Add vegetables that need more cooking time with the onion, while quick cooking vegetables can go in later.
  • Can this meal be frozen? Yes. Cool the chicken and rice completely before placing them in airtight freezer containers. For the best quality, use within 2 months. Thaw overnight in the refrigerator and reheat thoroughly.
  • Can I freeze the chicken and rice together? Yes, but freezing them separately is preferable. The rice keeps a better texture when it isn’t frozen directly in the creamy sauce.
  • How long can leftovers be stored? Keep the cooled chicken and rice in separate airtight containers in the refrigerator for up to 3 days. Reheat thoroughly until piping hot before serving.
  • Can the recipe be prepared ahead? The chicken can be marinated earlier in the day and kept refrigerated until cooking. The rice is best freshly cooked, but leftovers reheat well with a small splash of water.
