Description

Coffee biscuits with almonds and chocolate are a simple, homemade cookie that looks bakery-worthy. Each bite is rich, nutty, and sweet.


Ingredients

Units Scale
  • 250 g butter, softened
  • 1/2 cup caster sugar
  • 5 tsp instant coffee (or 2 tbsp strong brewed coffee, cooled)
  • 1/2 cup chopped almonds
  • Pinch of salt
  • 1/4 cup cornstarch (Maizena)
  • 2 1/4 cups cake flour
  • White chocolate, melted (for dipping)
  • Milk chocolate, melted (for dipping)

Instructions

  1. Preheat oven to 160°C (320°F). Line a baking sheet.
  2. Cream butter and sugar until fluffy.
  3. Beat in coffee.
  4. Mix in almonds, salt, cornstarch, and flour until the dough comes together.
  5. Roll into mini logs, arrange on a tray.
  6. Bake 20–25 minutes, cool completely.
  7. Dip half in white chocolate, half in milk chocolate. Let set.
