Ingredients
- 250 g butter, softened
- 1/2 cup caster sugar
- 5 tsp instant coffee (or 2 tbsp strong brewed coffee, cooled)
- 1/2 cup chopped almonds
- Pinch of salt
- 1/4 cup cornstarch (Maizena)
- 2 1/4 cups cake flour
- White chocolate, melted (for dipping)
- Milk chocolate, melted (for dipping)
Instructions
- Preheat oven to 160°C (320°F). Line a baking sheet.
- Cream butter and sugar until fluffy.
- Beat in coffee.
- Mix in almonds, salt, cornstarch, and flour until the dough comes together.
- Roll into mini logs, arrange on a tray.
- Bake 20–25 minutes, cool completely.
- Dip half in white chocolate, half in milk chocolate. Let set.
