100 grams fresh yeast = 40-50 grams active dry yeast = 33 grams instant yeast.

  • Recipe calls for 30g fresh yeast → Use 15g active dry or 10g instant

Tip: When using active dry yeast, dissolve it in warm water first. Instant yeast can be mixed right into the dry ingredients.
