Corn Bacon and Cheese Bread combine two delicious flavors in one savory and tasty treat. The bacon and cheese add a nice salty flavor while the bread provides a nice balance with its light and fluffy texture. The bacon and cheese also add a nice crunch to the bread, making it an ideal snack or side dish.

Ingredients

Units Scale
  • 341ml peaches and cream-style corn
  • 1 cup self-raising flour
  • 3/4 cup 1% milk (regular milk will also work)
  • 2 X-Large eggs
  • 1 tsp. baking soda
  • 1 tsp. baking powder
  • A dash of salt (You may omit the salt, depending on how much bacon you use)
  • 1/3 cup melted butter
  • 1/41/2 cup grated cheddar cheese *
  • 2 finely chopped spring onions
  • 1/41/2 cup bacon bits pieces

Instructions

  1. Preheat your oven to 350°F / 180°C.
  2. Use a 9 x 9″ pan and liberally cover it with a cake-releasing mixture, or any spray and cook.
  3. Mix in a large bowl all ingredients except onion, bacon, and cheese. (* I used ½ cup each of the bacon and cheese as we love it).
  4. Pour ½ the dough mixture into the prepared square baking pan, then sprinkle ½ of the cheese mixture over the entire base.
  5. Scoop out the rest of the batter and spread it over the cheese and then top it with the remaining cheese mixture.
  6. Bake at 350°F / 180°C. for 30 minutes or until set, and nicely browned.
  7. Use a tester inserted in the middle and when it comes out clean it should be done!
  8. Take it out of the oven but leave it in the pan for 5-10 minutes as this will help to release it without breaking into pieces.
  9. Slice into 9 even cubes and serve on its own for a light lunch with coffee or as a side dish. You can even have it as a main dish with salad.
