Description

This creamy chicken dinner brings tender chicken, colourful peppers, mushrooms and melted cheddar together in a rich garlic cream sauce. It’s a satisfying, home-cooked meal that’s easy to serve over rice, pasta, mashed potatoes or even buttery toast.

Ingredients

Units Scale
  • 4 chicken breasts
  • 2 tbsp ghee or butter
  • 1 tbsp olive oil
  • 1 chicken stock cube
  • 1/2 tsp chicken spice
  • 1 tsp dried oregano
  • 1/4 onion, thinly sliced
  • 2 spring onions, sliced
  • 2 large or 3 regular garlic cloves, crushed
  • 1/2 red pepper, julienned
  • 1/2 yellow pepper, julienned
  • 1/2 green pepper, julienned
  • 1 punnet mushrooms, sliced (about 227 g)
  • 1.25 cup – 300 ml fresh cream
  • 1 tbsp cornflour mixed with 2 tbsp cold water
  • 1 tsp dried parsley, plus extra fresh parsley for garnish
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Place the 4 chicken breasts in a pot and cover them with water. Add the chicken stock cube, 1/2 tsp chicken spice and 1 tsp oregano. Bring the water to a gentle simmer and poach the chicken for 15 to 20 minutes, depending on the thickness, until cooked through and tender. The internal temperature should reach 165⁰F (74⁰C).
  2. Remove the chicken from the pot and let it rest until cool enough to handle. Reserve about 1/2 cup of the poaching liquid in case you need to loosen the sauce later. Shred the chicken with two forks or slice it into bite sized pieces.
  3. Heat 2 tbsp ghee or butter and 1 tbsp olive oil in a large, wide frying pan over medium heat. Add the 1/4 sliced onion and 2 sliced spring onions with a small pinch of salt. Sauté for 3 to 4 minutes until softened.
  4. Add the 1/2 red pepper, 1/2 yellow pepper, 1/2 green pepper, 2 crushed large garlic cloves and 1 tsp dried parsley. Cook for 3 to 4 minutes, stirring regularly, until the peppers begin to soften and the garlic smells fragrant. Don’t let the garlic burn.
  5. Add the sliced mushrooms and cook for another 5 to 7 minutes, stirring occasionally, until they’ve softened and released most of their moisture.
  6. Stir in the cooked chicken, making sure it’s well combined with the vegetables. Pour in the 300 mL fresh cream and bring everything to a gentle simmer. Keep the heat moderate and stir occasionally so the cream doesn’t catch on the bottom of the pan.
  7. If you’d like a thicker sauce, give the 1 tbsp cornflour and 2 tbsp cold water a quick stir, then gradually add the slurry to the pan while stirring. Simmer for 1 to 2 minutes until the sauce thickens. Add a little of the reserved chicken poaching liquid if the sauce becomes too thick.
  8. Season with salt and freshly ground black pepper to taste. Reduce the heat to low, then stir in the 1 cup grated white cheddar cheese until melted and smooth. Avoid boiling the sauce once the cheese has been added, as excessive heat can make it grainy.
  9. Scatter fresh parsley over the top and serve immediately while the sauce is creamy and the chicken is piping hot.

Additional Information, Tips and Substitutions

  • Can I use chicken thighs instead? Yes. Boneless, skinless chicken thighs are a good alternative and often remain juicy. Cook until done, then shred or slice them before adding them to the sauce.
  • How do I avoid watery sauce? Fresh mushrooms release liquid as they cook. Give them 5 to 7 minutes in the pan, or until most of that moisture has evaporated, before adding the cream. If the sauce is still thin, stir in some cornflour slurry made with 1 tbsp cornflour and 2 tbsp cold water, adding it gradually until the sauce reaches your preferred consistency.
  • How can I prevent a grainy or split cheese sauce? Add the grated cheddar after the sauce has thickened, with the heat turned to low. Stir gently until the cheese melts, and avoid boiling the sauce after adding it. Grating cheese from a block can also help it melt more smoothly than pre-shredded cheese.
  • What can I use instead of fresh cream? Whipping cream or cooking cream works well. Half and half can be used for a lighter sauce, although it may be thinner. Milk is another option, but you’ll need to monitor the consistency and use a little cornflour slurry if necessary.
  • Can I change the vegetables? Absolutely. Use the peppers you have available, even if you don’t have all three colours. You can also add sliced zucchini or baby spinach. Add spinach near the end so it wilts without becoming overcooked.
  • Can I use canned mushrooms? Yes. Drain them well and add them after the peppers and garlic have softened. They’re already cooked, so they need less time than fresh mushrooms.
  • What if I don’t have white cheddar? Mature cheddar, Gouda, or Monterey Jack are suitable substitutes. Mature cheddar gives the sauce a stronger flavour, while Monterey Jack melts particularly smoothly.
  • Can I make the dish ahead of time? Yes. Cook and shred the chicken up to one day ahead, then refrigerate it in an airtight container. You can also slice the vegetables and grate the cheese in advance. Prepare the cream sauce shortly before serving for the best texture.
  • How long can I store leftovers? Refrigerate leftovers in an airtight container within 2 hours of cooking and eat within 3 to 4 days. Reheat only the portion you need. If the sauce thickens in the refrigerator, add a small splash of cream or milk while reheating.
  • What should I serve with this dish? Rice, pasta, mashed potatoes or crusty bread all work well. For a lighter meal, add steamed broccoli, green beans or a fresh green salad.
  • How can I make the recipe less salty? The stock cube, chicken spice and cheddar all contribute salt. Start with the listed seasonings, taste the sauce near the end and add extra salt only if needed. You can also choose a lower sodium stock cube.
  • Can I make the sauce thinner or thicker? For a thicker sauce, add cornflour slurry gradually and simmer for 1 to 2 minutes. For a thinner sauce, add reserved chicken poaching liquid, cream or milk a little at a time until it reaches the consistency you like.
