Description
This Creamy Corn and Zucchini Spoon Bake brings sweet corn, fresh zucchini and Parmesan together in one easy, savoury bake. It’s lovely alongside a main meal, but honestly, a generous slice with a fresh salad makes a tasty lunch all on its own.
Ingredients
- 2 tins creamed corn (about 398 mL each, depending on your brand)
- 1 tin corn kernels (about 341 mL), drained
- 2 1/2 cups grated zucchini, with excess water squeezed out
- 1 3/4 cups self-raising flour
- 4 large eggs
- 1 tsp baking powder
- 1/4 cup finely grated Parmesan cheese, plus extra for sprinkling
- 1 tbsp chopped fresh chives
- 2 tbsp olive oil
- Salt and freshly ground black pepper, to taste
- Butter or cooking oil spray, for greasing the baking dish
Instructions
- Preheat your oven to 350⁰F (180⁰C). Grease a large baking dish with butter or cooking oil spray.
- Grate enough zucchini to measure 2 1/2 cups, then squeeze out as much excess liquid as possible using clean hands or a clean kitchen towel. This step matters because watery zucchini can leave the centre too soft.
- In a large mixing bowl, combine 2 tins of creamed corn, 1 tin of drained corn kernels, 2 1/2 cups of squeezed grated zucchini, 1 3/4 cups of self-raising flour, 4 large eggs, 1 tsp baking powder, 1/4 cup finely grated Parmesan cheese, 1 tbsp chopped fresh chives and 2 tbsp olive oil.
- Season the mixture with salt and freshly ground black pepper to taste. Stir everything together until the flour is incorporated and the mixture is evenly combined. Don’t overmix it; just make sure there are no dry pockets of flour.
- Spoon the mixture into your greased baking dish and spread it evenly. Sprinkle a little extra grated Parmesan over the top for a savoury finish.
- Bake at 350⁰F (180⁰C) for 30 to 40 minutes, checking from the 30-minute mark. The top should be lightly golden, the edges should be set, and a skewer inserted into the centre should come out without wet batter. If the top browns too quickly while the centre is still soft, loosely cover it with foil and continue baking.
- Let the bake rest for 5 to 10 minutes before serving. It’ll firm up a little as it cools, making it easier to slice and serve.
- Serve warm as a side dish with roasted chicken, grilled fish or your favourite main course. For a lighter meal, add a crisp green salad and enjoy a generous slice.

Additional Information, Tips and Suggestions
- Can Creamy Corn and Zucchini Spoon Bake be frozen? Yes. Cool the bake completely, cut it into portions and store in a freezer-safe container or wrap individual slices well. Freeze for up to 2 months for the best quality. Thaw overnight in the refrigerator and reheat until piping hot. The texture may be slightly softer after freezing because zucchini contains a lot of moisture.
- How long will leftovers keep? Store leftovers in an airtight container in the refrigerator for 3 to 4 days. Refrigerate within 2 hours of baking. Reheat individual portions in the microwave or warm larger portions in the oven at 325⁰F (165⁰C) until heated through.
- How do I stop the bake from becoming watery? Squeeze the grated zucchini thoroughly using clean hands or a clean kitchen towel. Drain the tin of corn kernels well, too. If the zucchini is particularly watery, squeeze it again before measuring the final 2 1/2 cups.
- Can I use frozen zucchini? Yes. Thaw it completely and squeeze out as much moisture as possible before measuring. Fresh zucchini generally gives the best texture, but frozen zucchini works when properly drained.
- Can I replace the Parmesan cheese? Yes. Finely grated aged Cheddar or Grana Padano works well. The flavour and saltiness will vary, so adjust the seasoning to suit the cheese you choose.
- Can I use all-purpose flour instead of self-raising flour? Yes. Replace the 1 3/4 cups self-raising flour with 1 3/4 cups all-purpose flour and 2 1/2 tsp baking powder. Omit the additional 1 tsp baking powder listed in the original ingredients when making this substitution.
- Why does the recipe include extra baking powder when it uses self-raising flour?
- Self-raising flour already contains a raising agent. The extra 1 tsp baking powder may give the bake a little more lift, but it’s optional. For a slightly denser texture or if your flour already produces a good rise, leave it out.
- Can I add other vegetables? Yes. Finely chopped spring onions, grated carrot or diced red pepper can add colour and flavour. Avoid adding too many extras, and remove excess moisture where needed so the centre can set properly.
- Can I prepare the bake ahead of time? You can prepare the zucchini, drain the corn and measure the ingredients in advance. For the best rise and texture, mix everything shortly before baking. If baking ahead, cool it, refrigerate promptly and reheat until piping hot before serving.
- How can I tell when the bake is ready? The top should be lightly golden, the edges should be set, and a skewer inserted into the centre should come out without wet batter. Start checking at 30 minutes, but allow up to 40 minutes or longer if you’re using a deep dish.
- Why does the bake need to rest before serving? Resting for 5 to 10 minutes allows the centre to firm up slightly, making the bake easier to slice. It also helps the portions hold together when transferred to serving plates.
- What can I serve with Bake? Serve it with roasted chicken, grilled fish, a fresh green salad or roasted vegetables. For a light vegetarian meal, pair a generous slice with salad and your favourite dressing.

Creamy Corn and Zucchini Spoon Bake is a satisfying choice for anyone who enjoys savoury vegetable dishes with a cheesy finish. Sweet corn balances the zucchini, while Parmesan adds flavour to every slice. It’s easy to prepare, works as a side dish or light lunch, and pairs beautifully with salad, roasted chicken or grilled fish.
