Description

This Creamy Cottage Cheese Chocolate Mousse is one of those quick desserts that somehow tastes way fancier than it is. It’s creamy, chocolatey, lightly sweet, and the blender does almost all the work for you.

  • Chopped nuts

  • Banana slices
  • Vanilla yogurt
  • Whipped cream

Instructions

  1. Add 1 cup cottage cheese, 2 tbsp cocoa powder, 2 tbsp maple syrup, 1/4 tsp vanilla extract, and 2 tsp chia seeds to a blender or small food processor.
  2. Blend for about 30 to 45 seconds until completely smooth and creamy.
  3. Stop once or twice to scrape down the sides because cocoa powder loves sticking to the blender walls.
  4. Taste the mousse before chilling. If you like a sweeter dessert, add another 1 tsp of maple syrup and blend again for a few seconds.
  5. Spoon the mousse into 2 small jars, ramekins, or dessert cups.
  6. Cover and refrigerate for at least 30 minutes so the chia seeds can thicken everything slightly.
  7. Right before serving, add your toppings. Crushed cookies give it a dessert vibe, while berries or a banana make it feel a bit lighter. You can also add a spoonful of vanilla yogurt on top because it turns extra creamy.
  8. Serve chilled and enjoy. The texture gets even better after an hour in the fridge, although I prefer to leave it overnight for the chia seeds to thicken up.
