Creamy Crab Shrimp and Corn Bisque is rich, creamy and packed with seafood. Sweet corn, lump crab, tender shrimp and a little hot sauce make this one very hard to stop eating.

  • Can this be frozen? Yes, but I wouldn’t recommend it for the best texture. The heavy cream can separate when frozen and thawed, and shrimp can become a little rubbery. If you do freeze it, cool it quickly, store it airtight and thaw it in the refrigerator before reheating gently. Don’t boil it.
  • How long can it be stored and how? Store leftover bisque in an airtight container in the refrigerator for up to 3 days. Reheat gently over medium-low heat, stirring occasionally, just until hot. Avoid bringing it to a rolling boil.
  • Can I use chicken broth instead of shrimp stock? Absolutely. Shrimp stock gives you a deeper seafood flavour, but chicken broth works perfectly well.
  • Can I use frozen shrimp? Yes. Thaw them completely, peel and devein them, then pat them dry before adding them to the bisque.
  • Can I use canned crabmeat? Yes, although lump crabmeat gives the bisque a better texture. If using canned crab, drain it well and pick through it for shells.
  • What can I use instead of green onions? Finely chopped chives or a little extra fresh parsley will work. You can also leave them out.
  • What can I use instead of white wine? Use additional shrimp stock or chicken broth. If you want a little acidity, add a small squeeze of lemon at the end instead.
  • Can I make it less rich? You can replace some of the heavy cream with half and half, although the bisque won’t be quite as thick or luxurious. I wouldn’t replace all of it.
  • What if the bisque is too thick? Whisk in a little extra warm shrimp stock or chicken broth until it reaches the consistency you like.
  • What if it’s too thin? Let it simmer gently for a few extra minutes, stirring often. Since the seafood is already in the pot, keep the heat gentle so the shrimp don’t overcook.

This Creamy Crab Shrimp and Corn Bisque is rich, creamy and packed with sweet corn, tender shrimp and plenty of lump crabmeat.


Ingredients

Units Scale
  • 2 tbsp butter
  • 1 cup chopped onion
  • 1/4 cup chopped red bell pepper
  • 1/2 cup chopped green bell pepper
  • 1/2 cup chopped celery
  • 1 tbsp minced garlic
  • 2 cups shrimp stock or chicken broth
  • 1/2 cup dry white wine
  • 1/2 tsp dried thyme
  • 1/4 cup vegetable oil
  • 1/4 cup all-purpose flour
  • 3 1/2 cups heavy cream
  • 1 tsp salt
  • 1 to 1 1/2 tsp hot sauce, to taste
  • 1 cup whole kernel corn
  • 1/2 lb lump crabmeat, picked over for shells and cartilage
  • 1/2 lb medium shrimp, peeled and deveined
  • 1 tbsp chopped fresh parsley
  • 1 tbsp chopped green onions
  • 16 jumbo crab claws, optional, for serving

Instructions

  1. Melt 2 tbsp butter in a large saucepan over medium heat.
  2. Add 1 cup chopped onion, 1/4 cup chopped red bell pepper, 1/2 cup chopped green bell pepper, 1/2 cup chopped celery and 1 tbsp minced garlic.
  3. Cook for about 2 to 3 minutes, stirring often, until the vegetables start to soften. Don’t let the garlic brown.
  4. Add 2 cups shrimp stock or chicken broth, 1/2 cup dry white wine and 1/2 tsp dried thyme.
  5. Bring the mixture to a gentle boil, then reduce the heat slightly and let it simmer while you make the roux.
  6. In a separate skillet over medium heat, combine 1/4 cup vegetable oil and 1/4 cup all-purpose flour.
  7. Stir constantly with a whisk or wooden spoon for about 3 to 5 minutes, until the flour loses its raw smell and the roux turns a light golden blond colour. 
  8. Slowly whisk the roux into the simmering broth and vegetables until completely blended. Let it cook for about 1 minute so the mixture can begin to thicken.
  9. Slowly pour in 3 1/2 cups heavy cream, whisking as you go. Keep the heat at medium to medium-low and stir until the bisque is smooth. Don’t let it boil hard once the cream is in.
  10. Stir in 1 tsp salt, 1 to 1 1/2 tsp hot sauce and 1 cup whole kernel corn. Simmer gently for about 5 minutes, stirring occasionally.
  11. Gently fold in 1/2 lb lump crabmeat, 1/2 lb peeled and deveined medium shrimp, 1 tbsp chopped fresh parsley and 1 tbsp chopped green onions.
  12. Cook gently for about 4 to 5 minutes, just until the shrimp are opaque and cooked through and the bisque is hot. Be careful not to stir too aggressively or the crabmeat will break apart too much.
  13. Taste the bisque and adjust the salt or hot sauce if needed. If using them, garnish each bowl with jumbo crab claws and a little extra parsley or green onion.
