Chicken can be prepared in a vast range of ways, including baking, grilling, barbecuing, frying, and boiling. Since the latter half of the 20th century, prepared chicken has become a staple of fast food. Chicken is sometimes cited as being more healthful than red meat, with lower concentrations of cholesterol and saturated fat.

Description

Creamy pesto chicken meatball lettuce boats for when you want a dish that is full of flavor but low on carbs.


Ingredients

Units Scale
  • 500g Ground Chicken
  • 1 tbsp Ground Garlic
  • 1 tbsp Ground Ginger
  • 1/2 cup Breadcrumbs
  • 1/4 cup Pesto (homemade)
  • 1 Egg (beaten)
  • Creamy Pesto Sauce
  • 1/2 cup Pesto
  • 1/3 cup Cream
  • 1 tsp Black Pepper
  • Chopped Spring Onion (garnish)
  • Extra Grated Parmesan (garnish)

Instructions

  1. Combine the meat with all the other ingredients.
  2. Mix well.
  3. Shape into meatballs and pan-fry in shallow oil till golden brown.
  4. Gently heat the pesto in a pan.
  5. Once it begins to bubble, pour in the cream.
  6. Stir well till it thickens.
  7. Add in the pepper.
  8. Remove from heat.
  9. Place meatballs in the sauce, garnish and serve with your choice of pasta or in lettuce leaves topped with extra sauce.
  10. Enjoy!!
