Description
Ever wonder how some dinners hit the perfect balance between quick and indulgent? This creamy tagliatelle meat bolognaise combines tender minced meat with herby tomato sauce for full flavor without fuss.
Ingredients
- 2 x 410 g cans whole tomatoes
- 2 tbsp tomato puree
- 3 cloves of garlic
- 2 sticks of celery
- 2 small carrots
- Handful of coriander (or basil)
- 2 fresh red chillis
- 750 g ground extra lean beef or lamb mince
- 1 large onion, chopped
- 2 tbsp olive oil
- 3 tsp paprika
- 1/2 tsp chilli powder
- 1/2 tsp ground coriander
- Salt to taste
- Pinch black pepper
- 1 tsp dried Origanum
- 1 cup beef or lamb stock (from stock pot or bouillon cube)
- Tagliatelle, enough for 4–6 servings
- Olive oil for drizzling
- Fresh coriander or basil for garnish
- Parmesan shavings
Instructions
- In a blender or processor, add 2 x 410 g cans of whole tomatoes, 2 tbsp tomato puree, 3 cloves of garlic, 2 sticks of celery, 2 small carrots, a handful of coriander (or basil), and 2 chillis. Blitz until smooth and set aside.
- Make 1 cup of beef or lamb stock with a stock pot or a bouillon cube and set aside.
- Heat 2 tbsp olive oil in a large pan over medium heat.
- Sauté 1 large chopped onion until tender, about 5 minutes.
- Add 750 g minced meat and brown for 7 minutes, breaking it up with a fork so it doesn’t clump.
- Stir in 3 tsp paprika, 1/2 tsp chilli powder, 1/2 tsp ground coriander, salt to taste, a pinch of black pepper, and 1 tsp dried oregano.
- Cook gently for 1–2 minutes until fragrant.
- Pour the blitzed tomato mixture into the pan.
- Simmer gently for 40 minutes, stirring occasionally.
- If the sauce looks too thick, add stock gradually in small amounts to reach a saucy consistency. Taste and adjust seasoning as needed.
- Boil tagliatelle according to package instructions.
- Drain in a colander and drizzle with olive oil to prevent sticking.
- Spoon the meat bolognaise over tagliatelle.
- Garnish with fresh coriander or basil and a generous sprinkle of Parmesan shavings. Serve hot.
