Ingredients

  • 1 cup Self-Rising flour
  • 1/4 cup Maizena
  • 3/4 cup buttermilk (room temp works best)
  • 1/2 cup milk
  • 6 tbs oil
  • 1 egg, separated
  • 1 tbs sugar
  • 1 tsp vanilla essence
  • Butter or spray for greasing

Instructions

  1. In a mixing bowl, whisk together 1 cup Self-Rising flour and 1/4 cup Maizena until evenly combined.
  2. In a separate jug, mix 3/4 cup buttermilk, 1/2 cup milk, and 6 tbs oil.
  3. Stir in the 1 egg yolk and set aside.
  4. In another clean bowl, beat the 1 egg white until it reaches soft peaks.
  5. Add 1 tbs sugar and continue beating until firm peaks form.
  6. Gently mix in 1 tsp vanilla essence.
  7. Pour the wet mixture into the dry ingredients and whisk just until combined.
  8. Don’t overmix.
  9. Gently fold the whipped egg white into the batter in batches.Β  Keep it light as you need to get that airy texture.
  10. Preheat your snackwich toaster or waffle maker.
  11. Lightly brush with butter or spray generously so nothing sticks.
  12. Spoon in about 2 tbs batter per section, depending on your machine.
  13. Cook for 3 to 5 minutes, until the waffles are golden and cooked through.
  14. Serve warm with syrup, cream, ice cream, or even savoury toppings if that’s your thing.

Tip: Don’t stack hot waffles directly on top of each other. They’ll steam and lose that crisp edge. Let them rest on a rack if you can.

  1. Waffles !! First a Luxury !! Now they are all over the place, at Mall, in Ready Mixes. I Love them with Maple Syrup.
