  • How long can it be stored and how? Store leftovers covered in the fridge for up to 3 days. Reheat individual portions in the microwave or reheat the whole dish, covered, in a 350⁰F (180⁰C) oven until piping hot.
  • Can I use different meat? Absolutely. Beef mince is probably the easiest swap, but chicken or thinly sliced steak work nicely too.
  • What can I use instead of the wet spice? Use your favourite steak seasoning or a thick savoury marinade. For chicken, tandoori spice gives it a completely different but very tasty direction.
  • Can I add other vegetables? Yes. Peas, corn, mushrooms, bell peppers or finely chopped carrots can be added to the filling. Just cook watery vegetables first so the ba doesn’t become soggy.
  • What if the mashed potatoes are too soft? Let the drained potatoes steam for a few minutes before mashing. Adding too much butter or liquid can make the top difficult to spread.
  • What cheese works best? Cheddar is an easy choice, but mozzarella, Monterey Jack or a cheddar blend will also melt well.
  • Can I prepare it ahead? Yes. Assemble the entire pie, cover and refrigerate for up to 24 hours. Let it sit out for about 20 to 30 minutes while the oven preheats, then bake until hot throughout.

Description

Buttery mashed potatoes, savoury seasoned steak and a layer of sautéed onion and tomatoes come together in one very easy bake. It’s simple, filling and the cheesy top makes it especially hard to resist.


Ingredients

Potato topping

  • 2.2 lb1 kg potatoes, peeled and cut into chunks
  • 3 tbsp butter, plus extra for cooking
  • 1/2 tsp salt, or to taste
  • 1/4 tsp black pepper, or to taste
  • 3 spring onions, thinly sliced

Meat filling

  • 1.1 lb500 g stir fry steak, chicken or beef mince
  • 3 tbsp chops and steak wet spice
  • 1 tbsp wet tandoori spice, if using chicken instead
  • 1/2 tsp salt, or to taste
  • 2 to 3 tbsp water, as needed

Vegetable layer

  • 1 medium onion, sliced into rings
  • 2 medium tomatoes, sliced
  • 1 tbsp butter

Final Topping

  • 1 1/2 cups grated cheese

Instructions

  1. Add 1 kg peeled potatoes to a pot of salted water and boil until soft and easily pierced with a fork, about 15 to 20 minutes. Drain well.
  2. Add 3 tbsp butter, 1/2 tsp salt, 1/4 tsp black pepper and 3 sliced spring onions to the hot potatoes. Mash roughly with a fork. Don’t overwork, a few little lumps are perfectly fine.
  3. Heat 1 tbsp butter in a frying pan over low to medium heat.
  4. Add 500 g stir fry steak, chicken or beef mince and cook gently until browned and cooked through.
  5. Add 3 tbsp chops and steak wet spice and 1/2 tsp salt.
  6. If you’re using chicken, use 1 tbsp wet tandoori spice instead of the chops and steak spice.
  7. Add 2 to 3 tbsp water, a little at a time, if the meat looks dry.
  8. Stir well and cook for another few minutes so the seasoning gets right into the meat.
  9. Melt 1 tbsp butter in a clean frying pan.
  10. Add 1 sliced onion and cook until softened and lightly golden.
  11. Add 2 sliced tomatoes and cook for another 2 to 3 minutes. You want them softened but not falling apart.
  12. Spoon half of the mashed potato into a greased ovenproof dish and spread it out.
  13. Add all of the cooked meat, then spoon the sautéed onion and tomatoes evenly over the top.
  14. Spread the remaining mashed potato over the vegetables.
  15. Sprinkle 1 1/2 cups grated cheese evenly over the top.
  16. Bake in a preheated 400⁰F (200⁰C) oven for 10 to 15 minutes, or until the cheese is melted and bubbling. If you want a little more colour, give it another couple of minutes under the broiler, keeping a close eye on it.
  17. Let it sit for about 5 minutes before serving. It’s lovely with a simple green salad.
