Description

This classic honeycomb candy is wonderfully crisp, airy, and surprisingly simple to make. With only three ingredients, you’ll have a sweet treat that’s perfect for snacking, gifting, or crumbling over ice cream.

  1. Lightly grease a 20 cm square tin with butter and set aside.
  2. NB: Have everything ready before you start, as the mixture moves very quickly once the bicarbonate of soda is added.
  3. Add 200 g caster sugar and 5 tbsp golden syrup to a deep, heavy-bottomed saucepan.
  4. Stir over low heat until the caster sugar has completely dissolved.
  5. Avoid letting the mixture boil before the sugar has fully melted.
  6. If sugar crystals remain on the sides of the pan, carefully brush them down with a pastry brush dipped in a little water.
  7. Once the sugar has dissolved, increase the heat slightly and allow the mixture to simmer. Watch it closely as it changes colour.
  8. When it reaches a rich amber caramel colour, immediately remove the saucepan from the heat.
  9. Quickly add 2 tsp bicarbonate of soda and stir briskly with a wooden spoon until fully incorporated. The mixture will foam up dramatically and increase in volume.
  10. Immediately pour the foaming mixture into the prepared tin.
  11. Do not spread or press it down, or you’ll knock out the air bubbles that create the honeycomb texture.
  12. Leave the honeycomb undisturbed at room temperature for 1 hour to 1 hour 30 minutes until completely hardened.
  13. Once set, break or snap the honeycomb into chunks and enjoy.

  • Why didn’t my honeycomb rise? The caramel may have cooled too much before the bicarbonate of soda was added, or the bicarbonate may not have been fresh.
  • Why is my honeycomb sticky? Humidity can soften honeycomb. Store it in an airtight container as soon as it’s fully cooled.
  • Can I double the recipe? Yes, but use a larger saucepan to accommodate the increased foaming safely.
  • Can This Be Frozen? Yes. Wrap pieces individually or place layers between parchment paper in an airtight freezer container. Freeze for up to 2 months. Allow to thaw at room temperature before serving.
  • How Long Can It Be Stored and How? Store in an airtight container at room temperature for up to 2 weeks. Keep it away from moisture and humidity, which can make it sticky and soften the crunch.

  • Caster sugar: Granulated sugar can be used if caster sugar isn’t available.
  • Golden syrup: Light corn syrup can be substituted, although the flavour will be slightly different.
