Easy Mostly Healthy Muffins

Make these Easy Mostly Healthy Muffins Breakfast Muffins in a wink and have them ready for breakfast

Ingredients:

Mash one ripe banana in a mixing bowl,
Add 1 1/4 cups of flour
1teaspoon baking soda
1/2 cup demerara sugar
1 teaspoon of cinnamon
2 cups muesli or any grainy cereal including good old fashioned oats.
Mix up.
Add 1/2 cup of vegetable oil
1 egg
1Β½ cups of buttermilk or Lacto and a good splash of vanilla.

Method:

Stir in a cup of raisins and chopped nuts or anything that takes your fancy.
All in one bowl and experiment because this is pretty much a no-fail recipe.
Line 12 muffin holes. Fill each right to the top.
Place in the fridge overnight.
In the morning set the oven to 325 and hey presto healthy, hearty and of course hot muffins!
Heat the oven take the muffins straight out of the fridge into the oven.
Add butter and good jam and a good cup of Kenya AA.

      Thank you for linking – I read your post. I will check with Belinda re your complaint that they don’t hold together well. My thought would be that the coconut could be the problem, not sure but that’s my guess. It may have caused it to be a bit on the dry side thus crumbling and not sticking together. Another thought: It’s so fresh and may still have been a bit warm and that could also be the reason. Whatever caused it, I am sorry about that.
