Description

The frittata is an Italian dish that makes good use of whatever ingredients you have on hand. Sometimes also referred to as an “Egg Pizza”


Ingredients

Units Scale
  • 1/2 diced medium Onion
  • 34 tablespoons of Vegetable Stock
  • 1 1/2 cups of thinly sliced Mushrooms
  • 8 Eggs
  • 2 tablespoons of chopped chives
  • Pinch of Fresh garlic
  • Sea Salt and Freshly Ground Black Pepper
  • 150g lox

Instructions

  1. Dry fry the onion on medium heat in a little stock if necessary until soft.
  2. Add the mushrooms and a little more stock and continue cooking for 3-4 minutes.
  3. Add the remaining stock.
  4. In a bowl beat the eggs and then add the chives, and garlic and season to taste.
  5. Pour the egg mixture over the vegetables and turn down the heat to low.
  6. Cover and continue cooking until firm.
  7. About 1 minute before done, add the lox, return the lid and heat through and serve immediately.
  8. Cut into Pizza slices and serve.
