Es’s Balsamic Garlic Halibut and Baked Mashed Cauliflower

Balsamic Garlic Halibut 
Ingredients (Serves 2)
2 Halibut Steaks
2 tablespoons of Balsamic Vinegar
3 finely chopped cloves of Garlic
Juice of 1 lemon
Zest of 1 lemon
1 Tbsp. of virgin olive oil (VOO)
Freshly ground black pepper, sea salt and a little sweetener to taste
Fresh chives to garnish
Method
Mix the balsamic vinegar, lemon juice, lemon zest, garlic and oil in a bowl and add sweetener, salt and pepper to taste.
Heat extra oil in a pan over medium-high heat.
Dip both sides of the halibut steak in the balsamic mixture and cook in the pan for approximately 5 minutes each side.
Spoon extra sauce over the fish once your flip the fish over in the pan.
The fish is cooked when you can flake the fish with a fork.
Serve immediately.
Garnished with a chives.

Baked Mashed Cauliflower
Ingredients
1 medium to large cauliflower
Zero fat yogurt as needed
Salt & pepper
Paprika
Method
Break the cauliflower into small florets and steam until soft and tender.
Put the cauliflower, salt and pepper in a blender and blend until smooth, adding a little yogurt as needed to get the consistency of mashed potato.
Scoop the mixture into an oven proof dish and sprinkle with paprika.
Bake in a hot oven.  I grilled it at the end for a few minutes, until the top browned slightly.
