A South African Vetkoek or Fat Cake, crispy outside and warm and fluffy inside.
Ingredients:
4 cups Cake Flour
1 pkt (10g) instant yeast
1 big or 2 small potatoes mashed
2 teaspoons sugar
1 1/2 teaspoons fine salt
2 cups lukewarm water
1 teaspoon butter
melt butter in lukewarm warm.
Method:
Mix to a soft dough.Rise for ±1 hour.
I let it rise in Wonder cooker bag.
Punch dough and make a long sausage roll and cut it in round balls.
Rise again on little oil surface
Fry in oil until golden brown and Enjoy
Serve with spicy mince filling or grated cheese
