Lamingtons is an Australian cake, made from squares of sponge cake coated with an outer layer of chocolate sauce and rolled in desiccated coconut
Ingredients
5xl eggs
1 cup of sugar
100ml oil
100ml water
2 cups Self-raising flour
2 teaspoons Baking powder
Vanilla Essence OR Caramel essence
Method:
Cream sugar and eggs
Add oil and water and then the dry sieved ingredients.
Mix well.
Pour into a greased or parchment-lined square baking tin
Bake 180C for 20 minutes
Syrup
2 cups icing sugar
3 Tablespoons cocoa
1 cup boil water
Cut in 4cm squares
Dip in fine coconut
Pipe with caramel treats and decorate with walnuts
Tip* freeze the squares before dipping.
