Feriel’s Lamingtons

A lamington is an Australian cake, made from squares of sponge cake coated with an outer layer of chocolate sauce and rolled in desiccated coconut

5xl eggs
1 cup sugar
100ml oil
100ml water
2 cups Self-raising flour
2 teaspoons Baking powder
Vanilla Essence OR Caramel essence

Cream sugar and eggs
Add oil and water and then the dry sieved ingredients.
Mix well.
Pour into a greased or parchment lined square baking tin
Bake 180C for 20 minutes

2 cups icing sugar
3 Tablespoons cocoa
1 cup boil water

Cut in 4cm squares
Dip in fine coconut
Pipe with caramel treat and decorate with walnuts

Tip* freeze the squares before dipping.
