Madeira cake is a sponge cake in traditional British and Irish cookery and here we have a Flop proof Madeira Cake!


  1. 125g butter
  2. 1 cup of sugar
  3. 2 eggs
  4. 1 tsp vanilla essence
  5. Grated rind of 1 lemon (optional)
  6. 2 cups flour
  7. 2 tsp baking powder
  8. Pinch salt
  9. 1 cup milk

Method to best prepare this Flop proof Madeira Cake:

  • Cream butter and sugar till light and fluffy
  • Beat eggs one at a time..add vanilla and rind
  • Sift flour with the baking powder and salt
  • Add to cream mixture. Be sure to alternate it with milk
  • Grease a loaf tin and bake at 180C/350F for 1 hour, or until a toothpick inserted in the center comes out clean
  • Lightly sprinkle on icing sugar, and serve this Flop proof Madeira Cake with coffee to your guests
