Madeira cake is a sponge cake in traditional British and Irish cookery and here we have a Flop proof Madeira Cake!
Ingredients
- 125g butter
- 1 cup of sugar
- 2 eggs
- 1 tsp vanilla essence
- Grated rind of 1 lemon (optional)
- 2 cups flour
- 2 tsp baking powder
- Pinch salt
- 1 cup milk
Method to best prepare this Flop proof Madeira Cake:
- Cream butter and sugar till light and fluffy
- Beat eggs one at a time..add vanilla and rind
- Sift flour with the baking powder and salt
- Add to cream mixture. Be sure to alternate it with milk
- Grease a loaf tin and bake at 180C/350F for 1 hour, or until a toothpick inserted in the center comes out clean
- Lightly sprinkle on icing sugar, and serve this Flop proof Madeira Cake with coffee to your guests
