Description

These Fluffy Pancakes for Two are just the right size when you want a proper pancake breakfast without making a huge stack. They’re soft in the middle, lightly sweet and easy enough to mix up while the coffee’s brewing.

Ingredients

Units Scale
  • 1 cup flour
  • 1 tsp baking powder
  • Pinch of salt
  • 1 egg
  • 3/4 cup milk, plus more if needed
  • 1 tbsp sugar
  • Cooking spray, such as Spray and Cook

Instructions

  1. Add 1 cup flour, 1 tsp baking powder, a pinch of salt and 1 tbsp sugar to a mixing bowl and whisk or sift them together. Sifting helps break up any little lumps and gives you a lighter batter.
  2. In a separate bowl, beat 1 egg and 3/4 cup milk together until combined.
  3. Pour the egg and milk mixture into the dry ingredients and stir gently until everything is just combined. The batter should be thick but pourable. If it looks too stiff to spread easily, add 1 tbsp milk at a time until you’re happy with the consistency. Don’t overmix it or the pancakes can turn out heavier.
  4. Heat an electric frying pan over medium heat, around 350⁰F (175⁰C), or use a regular frying pan over medium heat. Lightly coat the surface with cooking spray. You don’t need much.
  5. Spoon or pour the batter onto the hot pan, using roughly 2 to 3 tbsp batter per pancake. Leave a little space between them so you can flip them without playing pancake Tetris.
  6. Cook for about 2 to 3 minutes, or until bubbles appear across the surface and the edges look set. Flip and cook for another 1 to 2 minutes, until puffed and cooked through.
  7. Repeat with the remaining batter, giving the pan another light spray if needed. Serve the pancakes warm with your favourite toppings.

Additional Information and Tips

  • Why is my pancake batter so thick? The batter is meant to be fairly thick, but it should still pour from a spoon. If it feels too stiff, add 1 tbsp milk at a time until it reaches a pourable consistency. Milk quantities can vary slightly depending on the flour and how it’s measured.
  • Can I make the pancakes thinner? Yes. Add a little extra milk to loosen the batter. Start with 1 tbsp at a time so you don’t accidentally make it too thin.
  • Why are my pancakes heavy instead of fluffy? Overmixing is one of the usual culprits. Stir the wet and dry ingredients together just until combined. A few small lumps are perfectly fine.
  • How do I know when to flip them? Look for bubbles forming across the surface and edges that appear set. That’s your cue to flip rather than relying only on the cooking time.
  • What temperature should I use? An electric frying pan works well at about 350⁰F (175⁰C). For a regular frying pan, use medium heat and adjust slightly if the pancakes are browning too quickly or taking too long to cook.
  • Can I use a regular frying pan instead of an electric frying pan? Absolutely. An electric frying pan simply gives you a larger, even cooking surface and lets you cook several pancakes at once.
  • Do I need butter or oil in the pan? No. A light coating of cooking spray works well. If you prefer, you can use a little butter or neutral cooking oil instead.
  • Can I change the sweetness? Yes. The 1 tbsp sugar gives the pancakes a lightly sweet flavour. You can reduce it for savoury toppings or add a little more if you prefer sweeter pancakes.
  • How long can the cooked pancakes be stored, and how?
Cool the pancakes completely, then place them in an airtight container and refrigerate for up to 3 days. Reheat them gently in a toaster, frying pan or microwave.
  • Can these pancakes be frozen? Yes. Once completely cooled, separate the pancakes with parchment paper and place them in a freezer-safe container or bag. Freeze for up to 2 months and reheat from frozen in a toaster, toaster oven or microwave.

Ingredient Substitutions

  • Milk: Regular milk can be replaced with unsweetened almond milk, oat milk or another milk alternative.
  • Flour: All-purpose flour works best for the texture. If using whole wheat flour, replace only part of the flour at first because a full substitution can make the pancakes heavier.
  • Sugar: Granulated sugar can be replaced with another granulated sweetener, although the flavour and texture may change slightly.
  • Egg: The egg provides structure and richness, so replacing it can change the texture. A suitable egg substitute can be used if needed, following the package directions.
  • Cooking spray: Butter, margarine or a small amount of neutral cooking oil can be used instead.
