Perfect and delightful lunch for the grandkids and they thoroughly enjoyed these fluffy saucy chicken, mushrooms, spinach pancakes with cheese
Batter:
Ingredients:
4 eggs
500 ml Cake flour
2 cups of water
1 cup fresh milk
2 teaspoon soft butter
One teaspoon baking powder
Method:
Beat with beater & let’s stand for 30 minutes
Fry in a greased non-stick pan until brown yummy recipe Bismillaah
Makes ± 27 pancakes
For freezing :
I layered each pancake with a plastic sheet and put it in an airtight container.
Filling:
Saucy Chicken, Mushrooms, Spinach, and Cheese
Ingredients:
3 chicken fillets cut into cubes.
Spice with peri and chicken spice.
1 chopped red onion
chopped spinach leaves
sliced mushrooms
small tin dessert cream
salt and pure black pepper
Method:
Stirfry chicken cubes in oil until golden brown.
Add 2 cloves grated garlic, mushrooms, and spinach.
Add dessert cream and stir all well together.
Grated Gouda cheese
Place saucy chicken on the end of pancake, add grated cheese, and roll-up.
Heat in microwave till cheese melts.
Serve with Italian lettuce and salads.
