Description

Make this no-bake cheesecake and watch it disappear fast on any dessert table.


Ingredients

Crust

Filling

  • 250g smooth cottage cheese
  • 1 can sweetened condensed milk
  • 75ml fresh lemon juice
  • 5 ml vanilla essence
  • 15 ml gelatin
  • 250 ml cold water
  • 250ml fresh cream, whipped

Topping

  • Fresh strawberries
  • 1 packet of strawberry jelly
  • 250 ml boiling water

Instructions

Individual Cheesecakes

  1. Crush 1 packet of Tennis biscuits until fine.
  2. Mix in 100g melted butter. Press the mixture firmly into your moulds or mini containers.
  3. Pop them in the fridge for 20 minutes to set.
  4. In a bowl, combine 250g smooth cottage cheese, 1 can condensed milk, 75ml fresh lemon juice, and 5 ml vanilla essence. Whisk until smooth.
  5. In a small pot, boil 15 ml of gelatin with 250 ml of cold water until fully dissolved. Let it cool slightly.
  6. Stir the gelatin into the cheese mixture, then gently fold in 250ml whipped cream.
  7. Pour this over the chilled biscuit base.
  8. Refrigerate until set.
  9. Decorate with fresh strawberries.
  10. Dissolve 1 packet of strawberry jelly in 250 ml of boiling water, let it cool slightly, and pour it over the set cheesecake.
  11. Chill again until fully set.

Large Inverted Tupperware Jello Mould

  1. Grease your mould well.
  2. Arrange strawberries on the bottom.
  3. Dissolve 1 packet of strawberry jelly in 250 ml of boiling water.
  4. Pour over strawberries and chill until set.
  5. Spread the cream cheese filling on top of the set jelly. Chill again.
  6. Press the crushed biscuit base over the cream cheese layer.
  7. Chill for a few hours or overnight.
  8. When you unmould, the strawberries with jelly mixture will be at the top, with the biscuit base perfectly at the bottom.
