Ingredients
Muffins
- 1 can Fruit cocktail
- 1/2 cup of flour
- 1/2 cup of sugar
- 2 eggs
- 1/2 cup powdered milk
- 2 teaspoons baking powder.
- 1/4 teaspoon baking soda
- 1 stick of butter or 1/2 cup of oil
- 1/2 cup of slivered Almonds
- 1 teaspoon vanilla extract
Topping
- 1/2 cup of desiccated coconut
- 1 cup of Evaporated milk
- 2 Tbsp sugar
Instructions
Muffins
- Sift all the dry ingredients together in a large bowl.
- Beat butter and sugar until light and fluffy.
- Add eggs one at a time and add dry ingredients, beat well.
- Fill the cupcake pans, or casings only ½ half full.
- Bake in a preheated oven of 350F / 180C for 17 minutes.
- Remove from the oven, put the topping on, and return it to the oven for 3 more minutes.
- Place a pan of water in the bottom of the oven, it keeps the muffins moist.
