Cupcakes:
- 1 cup sugar
- 1/2 cup unsalted butter, softened
- 4 large eggs

- 1 3/4 tsp baking powder
- 1/2 cup milk
Swiss Meringue Buttercream:
- 20 oz powdered sugar (icing sugar)
- 4 oz egg whites (about 3-4 large eggs)
- 2 sticks unsalted butter (room temperature)
- 2 tsp vanilla extract
Instructions
Cupcakes:
- Preheat your oven to 350°F (175°C).
- Line a muffin tin with paper liners.
- In a medium bowl, beat the butter and sugar until creamy.
- Add eggs one at a time, then mix in the vanilla.
- In another bowl, whisk flour, cocoa powder, and baking powder together. Slowly add this to the wet mixture.
- Stir in the milk until the batter is smooth, but don’t overmix.
- Spoon into muffin cups, filling each about ¾ full.
