Ingredients:
1 3/4 cups cake flour
1 cup ground almonds
1/4 cup castor sugar
1 tsp almond essence
250 g butter, room temp
1 cup icing sugar for rolling biscuits
Method:
Preheat oven to 150 C Line a baking tray with parchment paper
Mix flour, ground almonds, sugar together in a large bowl.
Cut in cold butter and with your hands work the butter into flour to form breadcrumbs then add almond essence.
Break off small pieces of the dough and shape into crescents.
Place on lined tray and bake for 10 – 15 minutes or until lightly golden.
Remove from oven and roll biscuits in the icing sugar
Makes about 2 dozen
