Well it would seem that a lot of members made chocolate cake this weekend😄😄
It’s our favourite too, so I made Feriel Sonday’s recipe with a chocolate fudge icing.
Very yummy 😘😘👍❤️
1 cup castor sugar
2 cups cake flour
3 large eggs
1 cup oil
1 cup fresh cream
3 teaspoon baking powder
3 tablespoons cocoa
1 Table spoon coffee (I used Jacobs)
½ cup hot water (125ml)
Whisk together eggs,sugar,oil & salt until creamy & sugar has dissolved.
Sift in dry ingredients & mix well.
Add fresh cream & mix.Add coffee that has been dissolved in water & mix well.
Pour batter into greased baking tin & bake in preheated oven at 180C / 350F for ±30-33min until skewer inserted comes out clean.
Once cake is done remove from oven & allow to cool.
When cake is cooled cut through & spread caramel on.
Top with chocolate ganache.

Chocolate Fudge Icing
In a saucepan add 125 g butter,
3 Tbsp milk,
1 Tbsp honey and heat on low to just before boiling point and all butter has melted.
Pull off heat,
stir in 2 cups sifted icing sugar and
3 heaped Tbsp cocoa powder.
Beat until smooth and pour over cake.
Decorate with chopped nuts.
