10 Apr Gail's Chorizo Brown Rice
2 Cups brown rice cooked in salt water according to packet instructions.
1 medium onion chopped
2 tbsp olive oil
2 cloves minced garlic
1/2 of each diced green and red peppers
200 g back bacon diced
1 pair of chorizo sausages cubed
2 tbsp tomato paste
2 tbsp water
1/4 tsp dried thyme if you have fresh then better
1/4 tsp oregano
2 tsp paprika
1 tbsp chopped parsley
Taste for salt and black pepper
Squeeze of lemon juice
In your saucepan fry bacon and chorizo until crispy.
Remove from pan and add onion, garlic, peppers and sauté until tender.
Remove from pan, add tomato paste with water add all seasoning, lemon juice and sauté on low heat for 3 mins.
Mix all ingredients into your rice.
Serve with grilled pork loin chops and sautéed vegetables
