Gail's Ginger Bread

Gingerbread refers to a broad category of baked goods, typically flavored with ginger, cloves, nutmeg or cinnamon and sweetened with honey, sugar or molasses
Ingredients
125 g softened butter or margarine
2 1/2 cups cake flour
2 large eggs
1/2 cup sugar (I used soft brown sugar)
2 teaspoons baking powder
1/2 teaspoon bicarbonate of soda
1/2 teaspoon salt
2 teaspoons ginger
2 teaspoon cinnamon
1/8 teaspoon cloves
1/8 teaspoon mixed spice
1 cup syrup
1 cup boiling water
Method:
Cream the butter/margarine, add sugar and mix well. Add eggs.
Sift together all dry ingredients and add to first mixture with syrup.
Add boiling water last.
Pour into well-greased loaf pan and bake at 160 C for approx 60 minutes or until a skewer comes away clean.
If the loaf is browning too fast place a piece of tin foil over.
