Ingredients:
2 Pork Fillets ( I used 4 x pork loin chops)
1 tbs Paprika
3 tbs Oil
1 tsp Salt
Black ground pepper
2 tbs Mustard
1/1/2 cups Pineapple juice
1/2 cup Red Wine
1/4 cup Honey
1 Clove Garlic minced
Sprinkle paprika and salt, black pepper onto the fillets.
Method:
Heat oil in a large frying pan medium to hot temp.
Sear the pork fillets for 3 minutes on both sides.
Brush mustard onto the pork fillet, coating the meat evenly.
Add pineapple juice, wine, honey and garlic.
Allow to simmer for 25 minutes on medium to low heat.
Remove fillets from the pan, reduce the remaining liquid into a lovely rich pineapple and red wine sauce.
Slice the pork, drizzle with pineapple and wine sauce, serve hot with green salad or vegetables.
Note : Cooking time will vary slightly according to the size of the pork fillet.
