Simple no fuss one tray meal, roast lemon chicken, potatoes, veggies and gravy.. comfort food for my honey’s👍👍❤
Wash and trim your whole chicken.
Pat dry with paper towels.
Rub the bird down with olive oil and garlic paste.
Make a dry meat rub ground in a pestle and mortar with
1 bay leave,
1/4 tsp chilli flakes,
1/4 tsp mustard seeds,
1/4 tsp dried thyme,
1 tsp paprika,
1/2 tsp salt,
1 tsp garlic & herb spice,
1/4 tsp cajun spice.
When nicely ground smear the chicken all over including the inside.
Cut up 1 lemon into quarters and place in the cavity of the bird.
Roast 1 hr at 180°C
