Served this delicious Spicy Rice tonight with grilled Chicken fillets and tomato, black olive & mozzarella salad. Also great to serve with grilled prawns. This has to be my favorite rice😊
2 tbsp canola oil
1 onion diced
1/2 of each, green and red bell pepper chopped
2 small red chillies chopped
2 cloves garlic minced
1/2 teaspoon cayenne pepper
1 tbsp mild piquante diced peppers
1 1/2 cups chicken stock
400 g can of whole tomatoes crushed with your hands
1 cup long grain rice
Over medium heat sauté onion, peppers, garlic, piquant peppers until tender, add cayenne pepper.
Add rice and stir for 2 mins.
Add stock and crushed tomatoes.
Bring to boil & continue cooking on low heat until all liquid is absorbed for about 20 to 25 mins stirring often.
Salt according to taste.
I don’t add salt because of the stock.
