It was sooo cold in Cape Town today so it had to be soup and homemade bread for supper 😘😘 my version of a Tuscan Bean Soup with homemade Tiger Bread. It was delicious 👍👍ticked all the boxes😉😉
Ingredients:
3 x Smoked Russian sausages sliced in rounds or any other suitable smoked sausage (Chorizo),
2 onions chopped,
3 cloves minced garlic,
1 red chilli chopped.
Method:
Sauté sausage for 2 mins in 2 tbsp olive oil, add onion, garlic and chilli, saute till onion tender.
Add 6 large skinned, diced tomatoes,
2 tbsp tomato paste,
1 tsp sugar and cook for further 3 to 4 mins till tender.
Add 4 cups chicken stock,
salt to taste,
black pepper to taste,
add good handful of chopped basil,
1 tsp garlic & herb seasoning.
Simmer soup for 20 mins.
Add 1 tin red kidney (sugar beans) &
1 tin cannellini beans washed & drained to pot & heat through.
Marrow Bones:
Preheat oven to 200°C bake 10 marrow bones, seasoned with salt & black pepper, pinch of sweet basil for 25 mins.
Add marrow to soup when serving, basil leaves & shaved Grana Padano, medium fat hard cheese.
