Gail's Vanilla sponge cake decorated with whipped cream & choc ganache2
It’s so light and fluffy 😊😊
Vanilla Sponge
Preheat oven to 160°C (fan assist) butter and flour 2 x 8″ baking pans well
Ingredients:
In a bowl sift together the following ingredients 3 x times
1/2 cup cornflour
1/2 cup custard powder
1 tsp cream of tartar
1/2 tsp bicarbonate soda
1 tsp cake flour
Pinch of salt
4 large eggs separated
3/4 cup castor sugar
Method:
Beat egg whites until stiff adding castor sugar 1 spoon at a time.
Add egg yolks and beat further.
Fold in dry ingredients with a spoon. Divide mixture in two pans and bake for 20 mins or until a skewer inserted comes away clean.
Remove from oven and immediately turn out onto cooling rack to cool completely. Decorate as desired.
