Garlic Parmesan Roasted Sweet and Yellow Potatoes

Ingredients

Serves 8:

  • 1 Extra large sweet potatoes
  • 2 Extra large yellow potatoes
  • 2 large red onions

Sauce:

  • 3 tablespoons olive oil
  • ½ stick unsalted butter
  • 5 minced garlic cloves or 2 heaped tbs. bottled garlic
  • 1½ teaspoon dried thyme
  • ½ teaspoon dried rosemary
  • ½ teaspoon dried parsley
  • 2 x ⅓ cup freshly grated Parmesan
  • Salt and freshly ground black pepper, to taste

Garlic Parmesan Roasted Sweet and Yellow Potatoes

Method:

  1. Preheat your oven to 425°F (210°C).
  2. Clean, peel and cut sweet and yellow potatoes as well as the onions in ¼” slices.
  3. Sprinkle a smidgen of olive oil on the bottom of the baking pan.
  4. Pack one slice of sweet and then yellow potato and lastly a slice of onion in rows in the pan.
  5. Melt the butter in a glass container in the microwave for 10-15 seconds.
  6. Add to and combine with the rest of the sauce ingredients.
  7. Use a kitchen brush and generously paint the sauce over the rows of potatoes and onions.
  8. Cover with aluminum foil and bake in a preheated oven for 1 hour or until tender when pierced with a fork.
  9. Remove foil and sprinkle the 2nd   cup of parmesan on top.
  10. Now return the baking pan to the oven turn up the temperature to broil and bake for 10-15 minutes until crispy and golden brown.
  11. Serve immediately and enjoy!
