Here is my family favorite gluten-free chocolate chip cookie recipe, made with gluten-free self-raising flour
Here is my family’s favorite chocolate chip cookie recipe.
This time though, I have used gluten-free self-raising flour, instead of regular self-raising flour, and the result was amazing!
Ingredients:
120g butter
Β½ cup caster sugar
Β½ cup brown sugar
1 egg
1 tsp vanilla paste
1ΒΎ cup gluten-free self-raising flour
Β½ cup of raw organic cocoa
Β½ tsp of baking soda
pinch of salt
Β½ cup of chocolate chips
ΒΌ cup chopped walnuts (optional)
Method:
Pre-heat oven to 170ΛC
Chop or crush walnuts (if using)
Chop butter into small cubes and place in a large bowl with white and brown sugars. With an electric beater, beat mixture until creamy
Crack an egg into a small bowl, add vanilla paste and lightly beat with a fork, add the egg to the creamed mixture and stir with a wooden spoon until combined
Sift flour, cocoa, baking soda, and salt over the mixture
Add chocolate chips and walnuts if using and mix well
Using a spoon, scoop golf ball-sized portions of the mixture and place on a baking tray, about 5cm apart
Bake in the oven for 10 -12 minutes or until golden
Remove biscuits and allow to cool on a wire rack
Store in an airtight container when cool.
