Description

Greek inspired mint and spice mince kebabs with fresh herbs, green chilies and warming spices. An easy oven baked dinner for the whole family.

Ingredients

Units Scale
  • 2 kg ground beef or mince of your choice
  • 2 large onions, finely chopped
  • 1 small bunch fresh mint, finely chopped
  • 2 large eggs
  • 1 tbsp ginger and garlic paste
  • 1 tbsp ground coriander and cumin (dhania jeera powder)
  • 1 tsp garam masala
  • 1 tsp turmeric
  • 1 tbsp chili powder
  • Approximately 5 green chilies, finely chopped
  • Salt to taste
  • 1 to 2 tbsp oil, for greasing the baking tray

Instructions

  1. Preheat your oven to 400⁰F (200⁰C). Lightly grease a large baking tray with 1 to 2 tbsp oil so the kebabs don’t stick.
  2. Finely chop 2 large onions, 1 small bunch of fresh mint and approximately 5 green chilies. If you prefer a milder flavour, remove the seeds from the green chilies before chopping.
  3. Add 2 kg mince, the 2 finely chopped onions, chopped mint, chopped green chilies, 2 large eggs and 1 tbsp ginger and garlic paste to a large mixing bowl.
  4. Add 1 tbsp ground coriander and cumin powder, 1 tsp garam masala, 1 tsp turmeric, 1 tbsp chili powder and salt to taste.
  5. Mix everything together thoroughly using clean hands or a sturdy spoon. The mixture should hold together when pressed. If it feels very wet, let it rest in the refrigerator for 15 to 20 minutes before shaping.
  6. Roll the mixture into evenly sized balls, roughly the size of a golf ball. Place them on the greased baking tray, leaving a little space between each one so they brown rather than steam.
  7. Bake for 20 to 30 minutes, turning the kebabs halfway through cooking for more even browning. Cooking time will depend on the size of the balls and the type of mince used.
  8. Check that the kebabs are cooked through before removing them from the oven. Ground beef, lamb and pork should reach an internal temperature of 160⁰F (71⁰C), while ground chicken or turkey should reach 165⁰F (74⁰C).

Additional Information, Tips and Suggestions

  • Choosing the Best Mince: Beef or lamb works particularly well with fresh mint and the warming spices in this recipe. A combination of beef and lamb is another good option. Mince with a little fat generally produces juicier kebabs than very lean mince.
  • How to Keep the Kebabs from Falling Apart: Finely chop the onions and mint, then mix the ingredients thoroughly so the eggs help bind everything together. If the mixture feels too soft to shape, refrigerate it for 15 to 20 minutes. If it still won’t hold together, add 2 to 4 tbsp breadcrumbs as needed.
  • Adjusting the Chili Heat: Five green chilies plus 1 tbsp chili powder can make these kebabs quite spicy. Use fewer green chilies, remove their seeds or reduce the chili powder if you prefer a gentler flavour. You can always serve a spicy sauce on the side for those who want extra heat.
  • Spice Blend: Dhania jeera powder means ground coriander and cumin. If you don’t have a prepared blend, mix equal parts ground coriander and cumin. Garam masala adds warmth, and turmeric contributes earthy flavour and colour.
  • Can the Mixture Be Prepared Ahead?: Yes. Mix the raw ingredients, cover the bowl and refrigerate for up to 24 hours before shaping and cooking. Keep the mixture at 40⁰F (4⁰C) or colder, and don’t leave raw mince sitting at room temperature.
  • How Do You Know When the Kebabs Are Cooked?: Browning alone doesn’t guarantee that the centre is cooked. Use a food thermometer to check the thickest part of a kebab.
    • Ground beef, lamb and pork: 160⁰F (71⁰C).
    • Ground chicken or turkey: 165⁰F (74⁰C).
    • Shape the kebabs evenly and leave space between them on the tray to encourage more even cooking and browning.
  • Can the Kebabs Be Cooked in an Air Fryer? Yes. Arrange them in a single layer and cook at approximately 375⁰F (190⁰C), checking after 12 to 15 minutes and turning halfway through. The exact time depends on their size and your air fryer, so always check the internal temperature.
  • Can Cooked Kebabs Be Frozen? Yes. Cool the cooked kebabs and freeze them in an airtight, freezer-safe container, separating layers with parchment paper if needed. For best quality, use within 2 to 3 months. Thaw in the refrigerator and reheat to 165⁰F (74⁰C). Uncooked shaped kebabs can also be frozen. Freeze them on a tray until firm, transfer to a freezer-safe container and thaw in the refrigerator before baking.
  • How Should Leftovers Be Stored? Refrigerate cooked kebabs in an airtight container within 2 hours of cooking and keep them at 40⁰F (4⁰C) or colder. Use refrigerated leftovers within 3 to 4 days, and reheat to 165⁰F (74⁰C) before serving.
  • What Can Be Substituted?:
    • Fresh mint: Parsley or fresh coriander leaves offer a different flavour.
    • Ginger and garlic paste: Use 1/2 tbsp grated fresh ginger and 1/2 tbsp minced garlic.
    • Green chilies: Use fewer chilies or substitute a small amount of finely chopped jalapeño.
    • Eggs: If necessary, try 2 to 4 tbsp breadcrumbs mixed with a little water to help bind the mixture, adding gradually.
    • Mince: Beef, lamb or a mixture of the two works well. Ground poultry is also an option, provided it is cooked to 165⁰F (74⁰C).
    • Chili powder: Reduce the amount to 1 tsp for a milder result.
  • What Should You Serve with These Kebabs? Rice, warm flatbread, a crisp green salad, roasted vegetables or a cucumber yoghurt sauce all make good accompaniments. A squeeze of lemon can also brighten the flavours and balance the spices.
