Description

Peppadew and Cream Moon Filling; Chicken Jalapeño Moons; Vegetable
Moons and Chicken and Mushroom Moons.

They make an excellent meal or side dish.


Ingredients

Units Scale

Peppadew and Cream Moon Filling

Chicken Jalapeño Moons

  • 500 g fillet cut into tiny cubed
  • 1/2 tsp garlic
  • 1 tbsp. butter
  • 3 tbsps. hot sauce
  • 2 tbsps. jalapeños minced
  • 1 tsp salt
  • 1/4 tsp lemon pepper
  • Black pepper to taste
  • 1/2 cup milk
  • 1 tbsp. Maizena (corn starch)

Vegetable Moons

  • 1 shredded baby cabbage
  • 1 grated onion [remove all the water]
  • 1 shredded pepper [colors are optional]
  • 1 cup corn
  • Grated carrots

Sauce for Vegetable Moons

  • 1 1/2 tbsps. butter
  • 1 cup milk
  • 1 1/2 tbsp. Maziena [boil]

Chicken and Mushroom Moons

  • 4 pieces chicken fillet cubed
  • 1 tsp salt
  • 1 tsp Aromat
  • 1 tsp Robertson’s chicken spice (or any other brand)
  • 1 tsp garlic
  • 1 tsp grounded chilies
  • 1 tsp black pepper powder
  • 1/2 green pepper cubed
  • 1 tin cream-style corn
  • 1 tray mushrooms (cleaned and steamed with salt and pepper)
  • 1 tub fresh cream
  • 1 tsp flour
  • 1 tsp Knorr Pepper sauce
  • 1 tsp Knorr Mushroom sauce
  • Grated cheese

Dough

  • 2 cups water
  • 2 tbsp. butter
  • Pinch of salt

Instructions

Peppadew and Cream Moon Filling

Cook onion in ghee/oil until soft, add crush garlic.

Add chicken and the rest of the ingredients. cook until almost done. add 1 tomato finely cubed and 1/4 cup chopped peppadews.

Cook until water cooked out.

When completely cold mix in 1 tub cream cheese and chopped green dhania.

Chicken Jalapeño Moons

Make a paste of ½ cup jalapeño (cut up)

In a non-stick pot braise chicken on high in butter till dry.

Add sauces & spices & cook until water is cooked out.

Add Maizena paste & allow to simmer until thickened.

Set aside to cool.

When cool add the cut-up jalapeño place a spoonful of filling in the center and close over tightly

Vegetable Moons

Boiled rice noodles.

Mushrooms [optional], stir fry the veggies in oil, add 1 tbsps. Aromat, salt, pepper, green masala.

Let it cool.

Sauce:

When cool, add salt, pepper, green dhania, spring onion, equal amounts of cheddar
and mozzarella cheese

Chicken and Mushroom Moons

Braise the chicken in ghee, add spices, and add green pepper and cream-style corn.

Add mushrooms

Make a paste with the flour/pepper sauce/mushroom sauce and water and add to
the chicken, then add fresh cream.

When cool, add grated cheese! Must be dry and thick!

Dough

Bring to a boil, then add 2 cups flour and stir vigorously until it forms a ball.

Knead into a smooth dough.

Roll out and cut with Tupperware cutter.

Brush with egg, then place a spoonful of filling in the center and close over tightly.

Dip in egg and breadcrumbs and freeze!.
