Ingredients
500ml Flour
500ml Sugar
500ml Oats
500ml Coconut
60ml Syrup
5ml Bicarbonate of Soda
200g butter
Method:
Preheat oven to 180C
Mix all dry ingredients together except for the Bicarbonate of Soda.
Melt the butter and syrup together on the stove and then add the Bicarbonate of Soda to the butter. It will foam.
Add the butter mixture to the dry ingredients, press the crumbly mixture firmly into the greased baking tray to a depth of 1cm.
Flatten with a rolling pin or the back of a spoon.
Bake for approximately 15-20 mins or until golden brown.
I cut into squares immediately as it’s a lot easier than when they hard.
Slow to cool for a minute or two and then lift off onto a cooling rack and allow to cool completely.

PS: This only makes exactly the amount you see in the picture (minus 1 for taste 😂). It is not a big recipe. It will NOT spread out over your whole baking tray unless it is a very very small one.
