Ingredients:
2 1/2 cups flour
1 cup black coffee cooled
2 teaspoons ginger mixed with
1 teaspoon mixed spice
1 cup oil
3/4 cup sugar
1/2 cup syrup
3 eggs
2 teaspoons bicarbonate dissolved in 2 tablespoons hot water
1 teaspoon baking powder
Method:
Beat eggs with sugar
Add oil, syrup, spices and ginger
Add flour alternately with coffee
Add bicarbonate of sofa and baking powder
Bake at 325F for 1 hr
