Hannah's Snoek (Fish) Salad


Ingredients:
Approximately 400g snoek, flaked very finely ensuring no bones
2-3 hard boiled eggs diced
1 tomato diced up very very finely
2-3 dill cucumbers (depending on size)
Salt and pepper to taste
Method:
Mix all together in a bowl till well combined.
Add approximately 1 cup (or less) mayonnaise (if you want a pink look, add just a touch of tomato sauce to the mayonnaise to make it very slightly pink)
Spread on a serving platter, decorate and keep refrigerated till serving.

  1. Snoek? Not familiar with that but this looks really good and as long as it isn’t Lutefisk I would eat the heck out of this!

      piratepatty, snoek is a uniquely South African fish, and not to be found elsewhere.
      The snoek, is a long, thin species of snake mackerel found in the seas of the Southern Hemisphere. This fish can reach a length of 200 centimetres (79 in) though most do not exceed 75 centimetres (30 in).
      I just love it and when I do go back to SA, it has to be on the menu

          In appearance its similar to a Barracuda but it is NOT the same. Unfortunately there is nothing similar to Snoek as it’s uniquely found in the seas of the Southern Hemisphere.

              Thanks dear. Try making it with something like Mackerel, I am sure it will be yummy as well, although not the same.
